Pastry Chef

Summary Description:

Under the immediate supervision of the Executive Chef, you will prepare and cook breakfast, lunch, and desserts for the guests of Yaddo, a storied and important non-profit artist residency. In addition to the meal service periods, Private and Fundraising events are held several times a year.

Typical responsibilities, activities, tasks, and assignments:

• Menu planning for weekly Breakfast, Lunch, Dinner, and Pastry Service. As a team, we discuss and plan our menus.
• Reviews and adapts recipes according to number of guests, available ingredients, etc.
• Directly responsible for the breakfast and quick bites program. This includes Breads, Pastries, Sweet and Savory Snacks, and some Breakfast items.
• Works with the Executive Chef on ordering and organization.
• Prepare daily desserts.
• Cleans and organizes the kitchen with the highest care.
• Preserving product.
• Follows all Food Safety protocols including HACCP plans.
• Helps the Executive Chef source local ingredients.
• May direct or assist server in serving food to guests.
• Helps design and coordinate special events.

Performs other special food procurement, preparation, clean up and other kitchen related duties as required.

• Buy groceries and specialty items as required. Receives foodstuffs and other items from suppliers.
• Creates new recipes to improve variety and enhance the nature of Yaddo meals.
• Helps to catalogue recipes.
• Monitors use of food and kitchen supplies and placing orders.
• Cleans and inspects kitchen appliances and equipment.

Required skills and abilities:

• Knowledge of recipes, methods and procedures used in preparing and cooking food.
• Knowledge in the operation, care and cleaning of kitchen equipment and utensils.
• Knowledge of storage procedures for foodstuffs and leftover foods.
• Ability to understand and follow oral and written instructions.
• The ability to work weekends and some holidays.

Job Type: Full-time

Pay: $50,000.00 - $60,000.00 per year
