- Assistant Department Manager and establish Sushi Section operation goal and execution plans.
- Develop and update menus and products with clear and practical operation instructions and reasonable cost calculation.
- Maintains high profit margin in accordance to the approved pre-set budget, which entails, but is not limited to: sales goals, cost of goods, expenses, price changes, waste management, and team development.
- At all times meets and exceeds Marukai and industrial standards in food, safety, service, and quality control and hygiene management.
- Review all sushi sales performance with department manager and adjust Sushi section operations plan with team members accordingly to achieve the operation goal.
- Collaborate with HQ Merchandise departments, Central Kitchen team, and other departments to get better resources and support for Sushi Section operations or projects.
- To gain better quality and cost-effective results, conduct searches, select, evaluate, and maintain the venders, suppliers, and 3rd parties with company approval.
- Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include selecting and training employees; planning, assigning, and directing work; addressing complaints and resolving problems.
- Other signed tasks from supervisor or managers.

- At least 3 years of Sushi Chef which can demonstrate the ability of sushi menu design and the creativity about sushi product
- 5+ years' progressive leadership experience in a food manufacturing environment will be plus
- Demonstrate knowledge of food safety and general facility safety practices and procedures
- Must be able to use job related equipment such as knives, wrappers, scales, compactors, garbage disposals, hand trucks and pallet jack.
- Comfortably connect with people and reach a level of hospitality that exceeds customers' expectation
- Has passion about food, thrive in a fast-paced environment and can still maintain a calm demeanor
- Able to approach every situation with a YES! attitude and seek to find a solution to all opportunities that arise.
- Must have mathematical skills which related to the job function
