Job Description:
Provide exceptional, knowledgeable, efficient service to guests and customers as to make their Luke experience memorable and personal. Confidently suggest beer, wine, cocktails and spirits for our guests to help guide their Wally's experience from start to end. Bussers will have the ability to explain dishes and to guide our guests through various courses throughout the menu. Administer duties related to taking food and beverage orders, serving alcoholic/non-alcoholic beverages and food orders to guests in the restaurant, according to Wally's expectations. Follow safe ABC alcohol guidelines and practices. Ensure guest loyalty at all times.

ESSENTIAL JOB FUNCTIONS:
- Reports to and follows directions and guidance of management. Maintain and complete all tasks assigned by management.
- Arrive to work on time, clean, groomed, and dressed ready for work.
- Attend daily pre-shift with Manager(s) on Duty to review what is expected of service before the shift starts.
- Busser must pay attention to details and be mindful of ticket times and coursing when placing orders into the Micros POS.
- Bussers must do their diligence and fire courses in an appropriate manner. DO NOT wait to place a series of orders and fire courses all at once. Please fire tickets one at a time.
- Follow and complete daily checklists for opening and closing side work.
- Complete weekly side work for that day part.
- Responsible for organizing and restocking, always use FIFO practice.
- Responsible for folding napkins and stocking server stations for service.
- Responsible to brew tea.
- To maintain an excellent level of cleanliness in and around the restaurant and all areas related for service. This includes having respect for common areas shared with other employees of the restaurant.
- Follow ABC alcohol practices. Attempt to limit problems and liability related to customers excessive drinking by taking steps such as persuading customers to stop drinking, or ordering taxis or other transportation for intoxicated patrons.
- Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
- Comply with all departmental policies/service procedures.
- Maintain complete knowledge of all menu items, labels, brands, beers, and non-alcoholic selections, correct glassware and garnishes.
- Study and maintain knowledge of the particular characteristics and description of every wine/champagne by the glass and wine updates on the wine list.
- Maintain complete knowledge of all respective menu items, prices, preparation method/time, ingredients and quality standards of taste, appearance, and texture, serving temperatures, portion size, garnish and method of presentation.
- Maintain complete knowledge of POS system. To balance cash and credit card receipts thoroughly and responsibly.
- Act with integrity, honesty and knowledge to promote the culture and values of Wally's.
- Contribute to create a culture and work environment based upon respect; providing opportunities for staff to learn, grow and develop their abilities.
- Operate within the restaurant on a daily basis with efficiency, respect, friendliness, professionalism, teamwork, knowledge, patience, awareness, compassion, courtesy and initiative.
- Consistent attention to detail and follow through of all restaurant policies.
- Attend all scheduled employee meetings and bring suggestions for improvement.
- Ensure that all guests feel welcome and give responsive, friendly and courteous service at all times.
- Anticipate and understand guest service needs. Read your table. Maintain good coordination and timing while serving orders quickly.
- Be well organized, maintain concentration, and think clearly when providing service within any given period of time.
- Focus your attention on details and teamwork. Work cohesively with coworkers as part of a team.
- Perform job functions with minimal supervision.
- Suggestively sell restaurant/catering/private events menu items, and all wines, beers and cocktails.
- Serve water, clear dishes and clear tables after guests leave. Take tableware to dish room and place silverware, dishes, glassware, etc. in appropriate areas for washing.
- Maintain complete knowledge of restaurant table/ seat numbers, proper set- up and hours of operation.
- Be familiar with all restaurant services in order to respond to guest inquiries accurately. Respond appropriately to guest requests.
- Communicate guest requests/issues to manager when needed.
- Fill in where needed to ensure guest service standards and efficient operations.
- Maintain a hygienic and safe environment at all times.
- Perform inventory responsibilities on a daily basis.
- Report the breakage, loss or theft of any restaurant property.
ESSENTIAL WORK SKILLS:
Must score 90% or more on the comprehensive food and beverage exam before eligible to become a server.
- A minimum of 1 years experience in a Busser position.
- The ability to courteously replace and remove plates, utensils and glasses without disturbing guests.
- Ability to multitask and perform required tasks in a rapid and organized manner.
- Be able to understand and communicate in English.
- Be able to reach, bend, stoop and frequently lift up to 50 pounds.
- Be able to work in a standing position for long periods of time (up to 8 hours a day).
- Effective oral communication skills and the ability to work as a team player.
- Must be impeccably groomed, maintain good hygiene, good posture and have required uniform.
- Must have the stamina to work up to 40 hours per week.
