The Beachside Diner is a busy diner on St Augustine Beach FL. The Kitchen manager is responsible for the strategy, planning, leadership and execution of our kitchen, this position is critical to the success of the restaurant, by ensuring the team delivers consistent quality food, timely executed in a food safe environment, by a motivated kitchen team
Core duties and responsibilities.
Kitchen Team – Responsible for hiring of kitchen team, goal of retaining a motivated and cross trained team. Setting the standard and leading by example, with a hands-on approach to leadership, culinary skills to hold your own on the line.
Scheduling for the kitchen –Schedules built on sales demand to meet labor targets.
Quality of Food – Cross trains the team, delivers high quality well executed. Using recipes and measures. Bench marked on Google and Yelp reviews.
Food Safety – Drives a culture of food safety, by adhering to Florida Health Laws.
Food Cost – Does weekly stock counts, calculates weekly GP, places food orders, records waste, manages portion control, has strong relationships with vendors to achieve profit goals.
Cleanliness & maintenance– Ensure cleanliness standards are met, weekly and monthly cleaning schedules and preventative maintenance of equipment.
Menu innovation – Drives menu development and enhancement of current menu items. Use of recipe cards and builds, drives LTO’s, menu analysis.
Qualifications, skills and abilities
Experience as a Kitchen Manager in a fast-pace, high volume environment – breakfast experience preferable.
Strong leadership skills – able to coach and develop others and promote teamwork.
Strong business acumen on all labor and food cost activities
Serve safe qualification up to date, in-depth understanding of local and federal health and safety requirements.
Advanced level of written, verbal, and interpersonal communication skills
Lift and carry up to 45lbs, work in a high temp and humidity of a busy kitchen.
