CSO is looking for a full-time Kitchen Manager for our shelter in Springfield, Friends of the Homeless.
This is a 40 hour/week position that will include a generous management benefits package and ample paid time off. Some weekend shifts required.
Duties include staff scheduling and training, menu planning, maintenance of nutrition standards, food ordering, shipment receiving, food storage, inventory management, food safety, food disposal, kitchen and equipment cleanliness and maintenance, and ServSafe compliance.
Responsibilities
- In conjunction with the Director of Foodservice, oversee the preparation, cooking and serving of 600 meals per day at scheduled times (breakfast, lunch, and dinner 365/day per year).
- Assist in the creation of weekly and monthly menus, including documentation of recipes, assurance of nutritional values, consideration of food costs, etc.
- Assist with staff scheduling, time-keeping, and staffing patterns (including breaks, accommodations, etc.). Ensures all shifts are properly covered.
- Provide regular supervision and direction to assigned kitchen staff.
- Train staff Cooks and Kitchen Support Workers in food preparation, meal service, food storage and other applicable standards.
- Orient volunteers and volunteer groups in conjunction with the Development & Volunteer Programs Manager and assures their volunteer service is both productive and enjoyable in accordance with agency customer service, safety, and sanitation standards.
- Manage daily food preparation, distribution and quality control practices of the department to ensure optimum quality of product and compliance with health, safety, and sanitation requirements and codes.
- Ensure proper sanitation practices in food preparation and cooking. Responsible for food rotation, labeling and dating of food, where appropriate.
- Work with Director of Foodservice to maintain inventory of food and supplies.
- Maintain proper documentation and record-keeping, including USDA compliance, past invoices, etc.
- Assist in occasional foodservice management at other CSO locations.
Qualifications
Three years' progressive experience in production kitchen; previous supervisory experience preferred. Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to maintain boundaries and consistently carry out agency procedures while treating guests and clients with respect. Basic computer skills, including email, electronic timesheets, Microsoft Word and Excel. Possess and maintain all licenses and certifications required by law. ServSafe certificate required or must be obtained within 90 days of hire. Valid MA driver's license with good driving record.
