Overview: The Executive Chef is responsible for the overall coordination and direction of all food production, food presentation, and back-of-the-house activity. The Chef is expected to meet or exceed community food service standards at all times while adhering to budgetary requirements and managing kitchen operations in a cost effective manner.
Essential Job Duties:
- Plans, staffs, organizes and coordinates the preparation of all meals in all levels of care in accordance with standard recipes and methods of preparation and presentation.
- Develops work assignments and schedules for all kitchen personnel and assigns special jobs to the appropriate staff members.
- Plans food production to coordinate with meal service hours so that quality, temperature, and appearance of food is preserved and meets standards.
- Observes preparation, portioning, and garnishing of meals to ensure appropriate methods of cooking, garnishing and portion sizes are as prescribed.
- Ensures compliance with Resident dietary restrictions.
- Prepares daily production sheets and forecasts supply needs to meet the food production requirements of the dining room, Health Center and special functions.
- Inspects equipment to determine repair or maintenance needs and cleanliness.
- Assist Director of Food and Beverage in the development and execution of operating budget.
- Responsible for creating the menus for all levels of care, special events and holidays.
- Responsible for payroll and scheduling for all back of house associates. Develops work assignments and schedules for all kitchen personnel and assigns special jobs to the appropriate staff members.
- Responsible for monthly in service and training of culinary associates.
- Responsible for placing the food order for the community through approved vendors.
- Responsible for overall kitchen cleanliness and ensuring sanitation standards are being meet.
Qualifications:
- High School graduate required with certification as required by state regulation.
- Associate’s degree in Culinary Arts program required.
- Serv Safe Certification required.
- A minimum of 10 year’s experience in food service management, preferred.
