We are seeking an F&B Director! The Director of Food & Beverage is responsible for directing Food and Beverage operations to ensure quality service and standards while delivering a guest experience that is unique. The Director of Food & Beverage must ensure compliance with all governmental regulations concerning health, safety, or other requirements. Is responsible for supervising a large number of employees in multiple major Food and Beverage outlets and kitchens, and banquet and convention facilities. Oversees multiple managers and supervisors.
ESSENTIAL DUTIES/RESPONSIBILITIES
- Develops & Implements strategies to increase revenues:
- Develops marketing plan by reviewing available data and conducting competitive surveys.
- Develop strategies to increase market shares, covers, check average.
- Develop and implement promotional programs.
- Coach employees on effective sales techniques and initiate employee incentives.
- Manage the operations of all Food & Beverage Outlets:
- Develop, implement and communicate Standard of Operations & Service for all outlets.
- Inspect restaurants, room service and bar areas on an on-going basis and takes appropriate steps to ensure facilities meet standards.
- Ensures that staff demonstrates technical skills; conducts technical training on a regular basis.
- Provides employees with current up-to-date information on menu offerings.
- Menu development and printing.
- Understand different types of Service, Cuisine, Wine and Food Pairings.
- Addresses customer concerns on a timely basis.
- Ensures high quality service and product delivered to Room Service customers:
- Establish, implement and maintains room service operating procedures.
- Schedules and supervises employees to ensure orders are filled promptly.
- Ensures staff follows proper billing, payment and credit card procedures.
- Monitors cleanliness of hallways; ensures servers return dirty dishes to kitchen promptly.
- Approves requisitions for required supplies.
- Assists in establishing menus; coordinates service for special functions.
- Develops and sells special promotions.
- Ensures amenity program is working as per standards.
- Financial - Labor Control, Liquor & Wine Cost:
- Participates and prepares monthly inventories as per schedule.
- Maximizes revenue by managing bookings.
- Responsible for Wine and Beverage cost – monitor pour, pricing, purchasing, receiving, etc.
- Maximizes productivity by using forecasting techniques to adjust scheduling.
- Prepares schedule based on forecasted numbers.
- Controls operating and payroll costs of staff.
- Participate in the preparation of the annual departmental operating budget and financial plans. Monitor budget and control expenses with a focus on food, beverage, and labor costs.
- Understand the strategic positioning of the hotel and how the products and services offered compare with the competitive sect.
- Other duties as assigned.

JOB QUALIFICATIONS
- 4+ years of related experience is required, including management experience.
- Bachelor’s degree/higher education qualification/equivalent in Hotel Management, Culinary Arts, or related field.
- Previous hospitality experience is required, preferably in a large luxury property.
- Must possess a positive service orientation — actively looking for ways to help people.
- Understanding of production and processing — knowledge of raw materials, production processes, quality control, costs, and other techniques for maximizing the effective manufacture and distribution of goods.
- Ability to demonstrate active listening, giving full attention to what other people are saying, taking time to understand the points being made, asking questions as appropriate, and not interrupting at inappropriate times.
- Knowledge of principles and processes for providing customer and personal services. This includes customer needs assessment, meeting quality standards for services, and evaluation of customer satisfaction.
- Knowledge of the structure and content of the English language including the meaning and spelling of words, rules of composition, and grammar.
Physical Environment:
- Incumbent may sit for long periods of time at desk.
- Incumbent may use calculators, keyboards, telephone and other office equipment in the course of normal workday.
- Stooping, bending, twisting, reaching, and lifting up to 20 lbs. may be required in completion of job duties.
- Walking: Moving about on foot to accomplish tasks, particularly for long distances or moving from one work site to another.
