Job description

We are hiring a Chef and B.
We are in search of a dynamic leader with expertise in Food & Beverage. This role will oversee all F&B efforts executed in the hotel including our Banquet Events.
Responsibilities:
~Assist with selection, training, counseling and motivating associates.
~Participate in the development of the hotel budget.
~Work with DOS and DOC teams to implement and execute revenue generating programs that will maximize F&B check averages, profits, and quality.
~Work with Concords approved program vendors to ensure services and product delivered match order.
~Ensure an associate attitude of attentiveness and anticipation of guest needs.
~Ensure proper delivery of guest special requests.
~Meet with and solicit comments from guests on a regular basis to ensure maximum satisfaction.
~Responsible for knowing hotel emergency procedures. Train associates to act accordingly in the event of an emergency or accident at the hotel.
~Assist in the maintenance of the key control program that is already in place.
~Ensure the security needs of the property and guests are met.
~Participate in community activities, associate functions, and guest events.
~Ensure effective departmental communication and information systems through logs, department meetings and hotel meetings.
~Communicate with the General Manager on a daily basis. Articulate any issues or areas of opportunity discovered.
~Ensure proper communication with sister properties throughout Concord's portfolio. Be willing to assist and Be part of Task Force as needed.
~Supervises, guides, and trains all management level associates in the food and Beverage discipline.
~Ensures constant and adequate supervision of each department at all times.
~Review dept. schedules, evaluates and directs all food and Beverage personnel.
~Provides disciplinary action when, and if, necessary.
~Provides associates with the necessary tools or equipment they need to perform their job.
~Participate in Monthly departments meetings, Property MOD program, Weekly staff meeting, Weekly food and Beverage meetings, Monthly inventories, Leadership Team meetings.
~Establishes, directs, and reviews performance standards in food preparation, purchasing, and production to ensure effective, controlled, coordinated efforts are achieved. For example, specs, recipe cards, menu costing, inventory control, etc.
~Monitors, directs, and coordinates effective sanitation, cleanliness, and organization in food and Beverage operating areas; to include maintenance and control of glassware, china, silver, and linen use and supplies.
~Manage staffing of food and Beverage departments to match needs of business generated by the
~Catering/Sales and Rooms Division. For example, group commitments, full occupancy, etc.
~Establishes, directs, and reviews liquor procedures to ensure adequate security and accountability; presentation and service performance. Maintain Perpetual Beverage ~Inv. as required by IA Handle or assists with any guest related opportunities, to include the follow up of said opportunities.
~Must maintain all foodstuffs and alcohol in accordance with federal, state, and local laws and regulations.
~Work within the budget and manage established guidelines in regard to costs, expenses, sales, and profit for food and Beverage departments. Develops, institutes, and maintains control and procedure to ensure sameness. Utilize Checkbook per IA requirements.
~Prepares a weekly sales and payroll forecast for food and Beverage departments.
~Ensures proper staffing procedures to ensure the highest possible payroll productivity at the lowest possible costs in keeping with the standards of Concord Hospitality operation.
~Manage all media in regards to F&B outlets and events. Designate Champion for Social media and web presence in F&B areas.
~Analyze and monitor profit and loss statements. Prepare monthly critique of Prelim results.
~Interview and hire new personnel if immediate manager for certain department is not available, when needed.
~Reviews and approves all food and Beverage department reviews, hires, job transfers, warning notices, counseling sessions and terminations.
~Evaluates staff performance and refers to the Standard Operating Procedures.
~Reads, learns, understands, and refers to the Standard Operating Procedures.
~Conducts performance evaluations and training sessions with each manager within the food and Beverage department.
~Promotes and ensures the upkeep of each department's training procedures and personnel development within the food and Beverage discipline.
~Develops and institutes new food menus for the Restaurant, Room Service, Lounge, and Catering/Sales Departments.
~Maintains food cost, high cost inventory controls, and establish par levels for product to control inventory levels.
~Develop and adhere to scheduled equipment Cleaning to maintain assets and ensure a high quality and clean work area.
~Ensure culinary staff are trained and held accountable for all internal audit and Brand required trainings (i.e. Great Food/Safe Food or Serve Safe).
~Is an active member of the property's Leadership Team.
~Provides for a safe work environment by following all safety and security procedures and rules.
~Assist other Leadership Team members and/or managers when needed.
~Evaluates staff performance on a 90 day, and annual basis.
~Each associate will be required to follow the rules as found in the Concord Hospitality Associate Handbook
