Under the direction of the Child Nutrition Director, the Assistant Director is to assist in supervising and coordinating USDA breakfast, lunch, and afterschool snack programs in the district; directs, coordinates, and monitors the work of kitchen site managers; directs, coordinates and monitors central kitchen operations; coordinates menu preparation; coordinates modification of the elementary menu to comply with USDA regulations and nutritional requirements for children with special dietary needs; assists in resolution of personnel issues including vacancies, evaluations, attendance, and performance conferences and plans of improvement; directs and coordinates meal accountability procedures to comply with district policy and USDA meal program regulations; provides technical direction for electronic point of service and menu management systems; related tasks as required.
ESSENTIAL FUNCTIONS
  1. Communicates with district personnel and vendors to provide quality food service to students and other district personnel.
  2. Conducts nutritional analysis of school menus to meet mandated nutritional and health requirements.
  3. Conducts site visits to observe operations to ensure compliance with required health and safety standards.
  4. Provides direction and daily operational support to the inventory clerk and the central kitchen chef and logistics supervisors regarding product outages, replacements, and routing changes.
  5. Evaluates new products to determine if quality, cost, student acceptability, nutritional value, and meal pattern contribution meet departmental standards for purchasing.
  6. Manages the district menu management and cloud-storage databases to keep product and ingredient information, recipes, nutritionals, menus, production records, and allergen information up-to-date.
  7. Monitors compliance with health codes and certification requirements to ensure operations are within sanitation and safety guidelines.
  8. Facilitates scratch recipe development process for central kitchen production, ensuring recipes meet meal pattern regulations and food safety standards for reduced oxygen packaging (ROP) and cook-chill production. Submits ROP recipes to the health department for approval.
  9. Organizes special district events to provide adequate and appropriate food service and special meal requirements.
  10. Performs personnel functions (e.g. recruitment, hiring, evaluations, discipline, etc.) to maintain adequate staffing and enhance productivity of personnel.
  11. Prepares documentation to provide written support and /or convey information.
  12. Prepares preschool/elementary/secondary menus to meet mandated nutritional and health requirements.
  13. Facilitates programming for Right-At-School and Early Learning meal programs.
  14. Responds to district personnel to discuss and resolve issues, challenges, and problems.
  15. Reviews building use requests involving food preparation to coordinate the effective use of facilities and meet district food preparation and service requirements.
  16. Supervises staff to carry out objectives within areas of responsibility safely and efficiently.
  17. Conducts training for Child Nutrition personnel to meet mandated nutritional, health, sanitation, storage, and safety guidelines and requirements.
  18. Coordinates menu planning and procurement processes to ensure food purchases meet mandated nutritional and health requirements and maximize the use of USDA Foods entitlement.
  19. Assists Child Nutrition Director in researching food service equipment needs to recommend the purchase of new and replacement equipment.
  20. Participates in design, planning, equipment selection, and permitting process for new school kitchen construction.
  21. Manages departmental technology replacement cycle, reviews the budget with the director, and coordinates ordering, software installation, and distribution of new printers and computers with technology services and Child Nutrition field supervisors.
  22. Assists other personnel as may be required to support them in the completion of their responsibilities.
  23. Assists with the completion of annual evaluations for Child Nutrition Staff.
  24. Represents Child Nutrition Services on district committees/on work groups as needed.

MINIMUM QUALIFICATIONS
Education and Experience
Bachelor's degree in nutrition, food service management, dietetics, family and consumer sciences, nutrition education, culinary arts, business, or a related field; three years prior experience in food service with increasing levels of responsibility, including supervision. Excellent analytical skills, and knowledge of electronic meal program systems and spreadsheets.
Required Knowledge, Skills, and Abilities
Knowledge of federal, state, and local laws, rules and regulations and policies governing Child Nutrition programs, modern methods of food preparation including cook-chill production and reduced-oxygen packaging, catering and concession operations, product cost contribution analysis, health codes and sanitation principles, nutritional requirements, customer service, marketing.
Skills to prepare food in large quantities, plan menus, maintain inventory control, use standard office equipment including computer, communicate effectively, present information to groups of people, make effective decision making, use English in both written and verbal form, and perform arithmetic calculations.
Ability to stand/walk for prolonged periods, communicate and direct other personnel, operate a computer, establish and maintain cooperative working relationships with students and other district personnel, meet scheduling deadlines, and maintain records. Significant physical abilities include lifting/carrying/pushing/pulling, reaching/handling, talking/hearing conversations/near/far visual acuity/depth perception/color vision/field of vision, and visual accommodation.
Desired Qualifications
Skill and experience in coordinating activities and implementing policies in multiple locations with several variables; excellent communication skills with a variety of audiences; experience in supervision/motivation; some experience in facility layout; knowledge of sanitation and food safety procedures; experience in resolution of personnel issues. Additional education and experience in finance and business administration is preferred. School Nutrition Association membership and certification is preferred.
Licenses/Special Requirements
Valid driver's license and evidence of insurability.
Requires fingerprinting and background check to determine that there have been no convictions involving physical molestation, abuse, injury, or neglect of a minor.
Washington State Food Worker Card
Certified Food Safety Manager Certification
Must have or be actively pursuing: School Nutrition Specialist (SNS) certification by the School Nutrition Association, Registered Dietician Nutritionist (RDN) credential, or Certified Chef credential.
REPORTING RELATIONSHIPS
This position reports to the Director of Child Nutrition.
MENTAL DEMANDS
Experiences frequent interruptions; required to meet inflexible deadlines; requires concentration and attention to detail; may occasionally deal with distraught or difficult individuals.
UNIT AFFILIATION
This is a non-union, Manager Level 3, exempt position.
