Job Summary:
As the Director of Food & Beverage for our luxury property in New York, NY, you will play a pivotal role in the oversight of all Food and Beverage operations, including a fine-dining restaurant, banquet services, private club, and a seasonal rooftop bar. Your primary responsibility is to ensure the highest levels of customer satisfaction, employee engagement, and financial performance for the F&B department.
Quality Assurance:
- Lead and analyze guest satisfaction, service quality, sales, and presentation of Food and Beverage products.
- Foster relationships with hotel guests and local clientele, actively engaging and addressing their needs.
- Manage guest complaints effectively, communicating resolutions with staff.
- Collaborate with the kitchen for expedient ticket times, food quality, and plate presentation.
- Co-develop menu planning and promotional events to stimulate sales.
Training & Development:
- Enforce Company policies and implement training programs for F&B staff.
- Conduct departmental trainings to ensure consistency in guest satisfaction standards.
- Stay updated on industry trends and practices through trade literature and site visits.
Financial Performance:
- Collaborate with the Resort General Manager to prepare the F&B department's budget, with a focus on labor costs.
- Monitor Food and Beverage costs in line with budgeted projections.
- Achieve the budgeted departmental Gross Operating Profit annually.
- Conduct weekly inventory of beverages and handle ordering of supplies.
Administration:
- Ensure the safety and security of guests and employees.
- Monitor daily check-in/check-out counts and employee schedules.
- Review and approve weekly payroll, ensuring accuracy and compliance with budget guidelines.
- Conduct annual reviews of service staff.
- Oversee maintenance walk-throughs and end-of-day reports for F&B areas.
- Ensure accurate processing of daily cash and charge reports in accordance with accounting procedures.
Job Requirements:
- Bachelor’s degree in Culinary, Restaurant Management, or Hospitality preferred.
- Minimum of five years' upper-level restaurant management experience in a fine dining/high volume setting.
- At least two years of back-of-house (culinary) experience preferred.
- Experience managing F&B operations for an Upscale Hotel is preferred.
- Knowledge of Food and Beverage preparation techniques, health department rules, and state liquor laws.
- Proficiency in POS systems (Micros, Aloha, etc.) and Microsoft Office Suite.
- Ability to multitask, work in a fast-paced environment, and attention to detail.
- Strong verbal and written communication skills.
- Positive and productive working relationships with other directors, managers, and employees.
- Ability to work independently and promote teamwork.
- Availability to work late nights, weekends, holidays, and long shifts during peak business demand.
- Ability to lift up to 30 lbs. occasionally and stand/walk for a 12-14-hour shift if necessary.
