CLUB DESCRIPTION
Hay Harbor Club, Inc. is a private, member-owned seasonal social club located on Fishers Island, New York, founded in 1909. The Club's main purpose is to establish and maintain social and recreational facilities and functions for its members' benefit. The Club is governed by the Board of Directors and various committees that oversee and help support the many activities offered.
There is a nine-hole golf course, eleven tennis courts, a swimming pool, and saltwater swimming “tank.” The waterfront program includes sailing, windsurfing, kayaking, and paddle boarding. Dining accommodations include a deli, bar, and restaurant. Activities and meals are available to members and their guests from the end of June through Labor Day. Fishers Island Ferry leaves out of New London, CT. 45 minutes to Fishers Island, cars are welcome.
SCHEDULE OF OPERATION
Hay Harbor Club is a seasonal operation open from late June to Labor Day. Dining services are available 11:00am – 3:00pm 7 days a week & 6:30pm-10:00pm, Friday to Tuesday. Staff meals are prepared 3 times a day, every day, preseason to closing.

POSITION SUMMARY: Executive Chef
Reports to:
Assistant General Manager & General Manager

All Food & Beverage Staff
4 Line Cooks, 8 Deli Line Cooks, 1 Staff Cook
Job Description: The Executive Chef will lead and direct all menu changes and updates for the Sunset Deck Dinner Menu, Harbor Deli Menu & Staff Meal Menu. Preparing menus for special functions, as well as set up & execution of events. Will handle hiring and training BOH staff. The person in this position must have the ability to lead and direct the staff in reaching expected food and supply costs. Responsible for work orders of all repairs and maintenance for all BOH operations. Will place all food orders and keep the relationships between purveyors. This person must be an effective delegator, take responsibility for all administrative functions and ensure compliance with the kitchen standards of operations. The Executive Chef must be well rounded, have the ability to work with people at all levels and be articulate as the position has reporting responsibilities to several people.
