Spanning 35 acres on Montauk’s Star Island, Montauk Yacht Club offers waterfront views, a private beach, three pools, multiple dining options and over 200 wet slips that can accommodate boats from small day cruisers to 300-foot superyachts. Holding eight decades of East End history as an elite social club and thoughtfully reborn for the modern traveler, guests can expect classic East Coast architecture, well-appointed interiors and detail-driven amenities.
As the Executive Sous Chef, you will play a crucial role in the culinary department. Working closely with the Executive Chef, you will be responsible for overseeing all aspects of the kitchen's operations, including food preparation, menu planning, staff management and ensuring the highest quality of culinary offerings. Your creativity, leadership skills and dedication to maintaining our reputation for culinary excellence will be key to your success in this role.
Responsibilities
- Assist Executive Chef in overseeing all culinary operations
- Responsible for providing guidance and direction for day-to-day operations
- Direct oversight of the hiring, training, coaching, development, and discipline for culinary staff
- Plan and manage the procurement, production, preparation, and presentation of food in the hotel in a safe, sanitary, and cost-effective manner
- Understand all job requirements for culinary team and be able to perform duty as necessary
- Ensure compliance with food handlers and sanitation standards
- Maintain complete knowledge of and comply with all departmental policies, procedures and brand standards
- Complete daily, weekly and monthly management administrative duties including operations reports, financial documentation, Human Resources/Colleague paperwork, Standard Operating Procedures, safety and sanitations checklists, and ordering and inventory documentation
Qualifications
- Minimum 3 years of culinary experience in a similar leadership position
- Strong leadership skills to manage and motivate the team
- Excellent organizational and planning skills
- Excellent communication skills
