As a Pastry Cook III at Edgewood Tahoe, you prepare food in assigned areas ensuring high quality food is served quickly and consistently to meet the expectations of our guests. The facility offers opportunities in three distinctive restaurants from casual to fine-dining, a high-volume banquet kitchen and full scratch bakery and you may work in various kitchens. Essential Functions:
- Memorize recipes and procedures.
- Cook food in accordance with management specifications
- Memorizes recipes and procedures; make recommendations for efficiencies.
- Prepare and follow recipes accurately.
- Work towards developing a positive work environment.
- Stock, clean and sanitize work area; work safely and report any maintenance needs.
- Communicate with “front of the house” and chef; keep management informed of food quality opportunities or shortages to ensure proper par levels are maintained.
- Properly label and date product at all times. Practice FIFO.
- Operate all kitchen equipment and hardware based on their particular functions for use, breakdown, and cleaning.
- Proficiently work multiple stations and float when assistance is needed.
- Follow food safety laws as required by state regulatory services.

Qualifications / Special Skills:
- At least one-year pastry or bakery related cooking experience in a fast pace environment.
- Basic knowledge of custards, sauces, pies, cookies, choux pastry, pastry creams, Bread knowledge, mousses, pastry amenities.
- Basic knife skills.
- Follow all prep lists, EOs, and recipes
- Ensure superior food quality and presentation consistent with AAA Five Diamond/Forbes Five Star standards and take corrective action to resolve any areas of concern.
- Professional attitude, good organizational, interpersonal, and communications skills.
- Ability to work under changing conditions and periods of changing priorities.
- Available to work varied shifts when needed, including weekends, holidays, and nights.
