The Blue Star, opening August 7, 1995 in Old Colorado City, fulfilled Joseph Coleman’s childhood dream. Quickly outgrowing the first location and moving three years later to 1645 South Tejon Street, The Blue Star has been at the center of the culinary scene in Colorado Springs for over 20 years. The Blue Star will be reimagined and open in a new location in 2019. Adding to the Blue Star Group family, La’au’s Taco Shop opened in 2007, bringing diversity and new culinary experiences to the local community. In 2013, partnering with Bristol Brewing Company, Blue Star Group purchased and developed the Ivywild School, adding Principal’s Office and Old School Bakery to the family of restaurants. Blue Star Group has a passion for excellence, delivering an unparalleled guest experience through outstanding cuisine paired with exceptional hospitality and heartfelt connections. Current shops include Ivywild Kitchen, Principal's Office, Lazo Empanada, Decent Pizza Co. at Ivywild School, Stellina Pizza Cafe, and La'au's Taco Shop.
About La'au's Taco Shop
La’au’s Taco Shop serves up fresh, healthy Hawaiian-inspired fare in a relaxed atmosphere nestled in the heart of Colorado Springs.
Our flavors are a tribute to Hawaii with roasted pineapple, mango, lime, green papaya and fresh Mahi-Mahi on our menu. We added our own twist with more adventurous tastes like Aji de Peru, ancho chilies, fresh radishes, and cojita cheese.
Handmade (really!) tortillas wrap every taco or burrito. But hey, if that’s not your style, build a bowl, salad or lettuce wrap topped with any of our salsas and guacamole mixed by hand, every day. We hope you taste a bit of Aloha (love & kindness) in every bite.

Qualifications

- Minimum age requirement: 16 years old
- Be able to stand and work on their feet for multiple hours at a time
- Be able to complete online Food Safety class
Shifts
This is a part-time or full-time position.
Open availability preferred including weekends.
Current hours of operation are:
Tuesday - Sunday: Flexible schedule between 10:00am - 10:00pm
