About the Role
Spiegelworld is looking for a Food and Beverage Manager to join the team at Absinthe at Caesars Palace in Las Vegas. The Food and Beverage Manager is responsible for ensuring a smooth flow of service through various tasks which include assisting customers and staff, ensuring prompt resolution of guest inquiries, and monitoring employees' performance. This position reports to the Company Manager.
Responsibilities
- Manage the quality of the Green Fairy Garden, including bars, coffee cart, and food truck.
- Promote cooperative effort, a team spirit, and good morale among employees.
- Ensure adherence to policies and procedures, setting the standard for excellence in the venue.
- Oversee assistant managers, bartenders, barbacks, servers, fountain workers, cooks, and utility porters.
- Manage hiring, training, evaluating, leading, motivating, and coaching all employees.
- Weekly Scheduling and payroll.
- Track and Manage attendance in accordance with Company policies and as outlined in the Collective Bargaining Agreement between CP and the Union.
- Issue Discipline in accordance with Company policies and as outlined in the Collective Bargaining Agreement and in a fair and balanced manner.
- Completing and submitting paperwork for injuries and incidents
- Communicate with unions regarding employees when needed.
- Communicate with marketing and assisting with all events in theater and garden.
- Communicate with front of house manager and company management daily .
- Working with marketing and executive teams to approve any operational changes/initiatives.
- Coordinate with retail buyer for training and supplies.
- Being visible and actively participating in service and daily operation.
- Ensure the team is aware of specialty Food and Beverage selections and VIP guests.
- Responsible for communicating daily changes that pertains to the shift (new menu items, price changes, etc) as well as daily employee edits after shift.
- Inspect Food and Beverage equipment regularly and arrange for maintenance.
- Keep track and weekly ordering of all Food and Beverage supplies as needed.
- Track spending of all purchases in collaboration with Spiegelworld Finance department
- Perform open and closing procedures including reconciliation of cash and credit transactions and tipping out employees, ensuring cleanliness, SOPS are being met, etc.
- Picking up cash deposits and transfer deposits to the Absinthe safe
- Daily reporting and monitoring in relation to sales and p-mix
- Frequently evaluate current operations, adjusting and creating new SOP’s as necessary.
- Resolve complaints from guests in a polite and friendly manner
- Prioritize and handle multiple tasks simultaneously

- Working collaboratively through duties and initiatives assigned by Company/General Management
What You Bring
- Must complete OSHA 30 within 30 days of employment.
- Must have Certified Food Protection Manager Card or obtain it within 15 days of employment.
- Have 5 years of experience in the Food and Beverage industry.
- Must have knowledge of culinary unions and procedures.
- A bachelor’s degree in hospitality or hotel/restaurant management is desirable.
- Hands-on experience operating a restaurant as part of the leadership team.
- Wealth of Food and Beverage experience in large restaurants and proven experience as a manager. Experience in the Las Vegas or nightlife market is a plus.
- Proven people management, motivation, and development skills to be an inspirational leader to your team. Experience managing union staff is a plus.
- Strong problem-solving skills and ability to work in an always changing, never dull, creative environment that creates memorable moments.
- Possesses excellent communication (written and verbal), financial acumen and business management abilities.
- The ability to effectively communicate in English, both written and verbal.
- Must have a flexible schedule with the ability to work nights, weekends, and holidays.
- Background check and drug screening as applicable
- Must have valid work authorization for the US
