YOUR MISSION (The Job Description):
The Beverage Manager position is a unique opportunity within the property. This is an action role, not an office job.
Virgin Hotels Las Vegas encompasses multiple outlets providing culinary, drink, and entertainment options that cover a wide range of interests. No mixology snobs wanted herel This position appreciates all forms of beverage service and knows how to tailor a variety of programs for our guests.
Sometimes a guest wants to be introduced to a handcrafted cocktail or a celebratory bottle of wine. Other times a guest just wants a local, favorite brew. We cater to all because what matters to us in the end is that our guests are happy and comfortable in our presence.
This position is not just about design. It's really about the action! There is a large bar staff over many outlets that needs leadership, guidance, and structure. This team is responsible for nightly operations but also executes live entertainment and events.
This position is made for someone who can think about the big picture and guest details at that the same time. This person finds passion being present on the floor during service; directly impacting the guest and staff experience.
THE NITTY-GRITTY (The Essential Job Duties):
In helping you understand your role in working for a progressive, environment conscious, world class organization, the following is a list of your essential job responsibilities. Please keep in mind that this list is not all inclusive and that you may be asked to perform other job tasks by your supervisors/managers. Not listed below in the constant quest to provide outstanding customer service experience for our guests:
  • Virgin Hotels Las Vegas has multiple outlets with varied concepts. Choosing the right food, wine, beer and cocktails for each restaurant is crucial in targeting the right guests while staying in line with the culinary vision.
  • Of course, you love the creative process of making a new drink. But you're in business to make money. Keeping a property profitable and fiscally sound is how you sleep best at night. You've designed and implemented rigorous checks, standards and inventory controls. Nothing gets by you!
  • Team player. This is a very unique position as you will be working with a very talented group of individuals. You will be working closely with entertainment directors, outlet managers, event directors and hotel managers on a daily basis. They might all have different needs for their event or location...it's your job and pleasure to make that a reality.
  • Your hand is literally in the pot of each outlet. You will be managing multiple programs simultaneously. Happy hour in the casual restaurant, a unique find in the wine bar, a mixology program in the intimate bar, the best vodka on the rooftop lounge and a large bottle selection in our premium bar. Not only do you have to be a mastermind of keeping track of all of this, but you have to consistently spread the word about the joy you bring. Managers, hourly colleagues and guests need to be "in the knowl"
  • Managing the Now that these amazing "I can't believe I've never tried that beforel" menus are in place you must control and monitor their daily progress. You will work closely with purchasing and receiving managers to ensure you have all the product, mixes and garnishes you need. You will track usage, reduce waste, eliminate the temptation of theft and meet budgetary goals. A bartender will never utter the words "I'm sorry, we don't have that."
  • Train, train, train! It all starts here. You will be responsible for building a team of talented individuals who never let the ball drop. This means creating and monitoring a consistent training program that keeps the team on their toes. The initial training program has to prepare our new members for what lies ahead and set them up for success. Then you follow up with daily, weekly and monthly lessons to keep everyone learning and growing.
  • Nothing goes amiss on the floor because you've done all the work in advance. Your team knows exactly what product to pull and how much to prep. They have followed clear recipes, directions, and usage of materials to create consistent drinks time and time again.
