Title: Flavorist Apprentice (SFC-Tested)

Key Responsibilities:
Summary: Flavorman is seeking a Flavorist Apprentice to join our growing flavor development laboratory. This position requires a candidate who is familiar with flavor chemistry and is a certified flavor apprentice with The Society of Flavor Chemists. The candidate will be a detail oriented, hardworking individual with strong math and chemistry skills and firsthand knowledge of flavor manufacturing. The position is engaged in the development of liquid food and beverage flavorings and will understand flavor regulations associated with the industry including FDA, TTB, and specialty food chain regulations. The successful candidate will play a key role in flavor development, reviewing final flavor formulations, and cost reduction. The candidate must understand the functions and solubilities of flavor materials and solvents. The candidate will have strong communication skills and will work closely with customers to develop custom flavors for finished products. The position interfaces directly with the Flavor, Beverage, Production, and Sales departments to execute the performance of key responsibilities. This is an onsite position at our business casual corporate campus in Louisville.
Required Skill Set: The candidate will understand functionality of flavor materials and be able to creatively develop flavors per analytical reports and customer descriptions. Loose understanding of GC/Mass Spec, FID and associated reports. Understanding of FDA, USDA, TTB and all CFR references associated with flavor and beverage development a plus. Able to successfully compound a flavor bill of materials with a strong attention to detail. Laboratory and food or beverage manufacturing experience is preferred. The candidate must have strong organizational skills to handle a large workload with shifting priorities. Good communication skills are required to coordinate work internally and externally with customers.
Job Description (includes but is not limited to):
R&D Flavor Development
o Accurately read an analytical report
o Understand flavor materials’ functionality, organoleptic qualities, and interactions.
o Develop flavors creatively, analytically, and demand-driven by customer and department descriptions.
o Understand solubilities of flavor materials and solvents to determine stability in finished flavors and beverages.
o Precisely weigh all ingredients specified in a formulation, ensuring accuracy of code numbers, lot numbers, and ingredient descriptions and weights.
o Manufacture products according to special instructions, when included, but not limited to mixing, heating, and filtering step sequence, when applicable.
o Follow approved manufacturing protocols, record keeping, and methods of operation including but not limited to, Standard Operating Procedures, site regulations, departmental rules, and required regulatory procedures.
o Prioritize safety in working with all flavor materials (wet, dry, viscous, flammable, hot and hazardous substances).
o Maintain an organized raw material library
o Work within proper GMP, safety, allergen, SOP, SQF, HACCP and Kosher guidelines
Beverage Department Support
o Understand raw material profiles to make suggestions on top note flavors per customers’ needs.
Flavor scale up support Production
o Troubleshoot scale up issues regarding raw materials, solubility and stability concerns.
QC Assistance
o Aid in sensory evaluation of incoming raw materials and outgoing flavors
Employee Development
o Assist in developing staff and training basic flavor needs.
Qualifications:
· College education preferred in a related field.
· Certified member of the Society of Flavor Chemists preferred
· Flavor compounding experience
· Basic aroma chemical experience
· Proficient computer and clerical skills, including Microsoft Word, Excel and Outlook.
· Strong attention to detail and commitment to quality and safety
· Perform routine work assignments and following directions with moderate supervision
· Demonstrated ability to set priorities and meet deadlines on concurrent projects in a fast-paced, occasionally stressful environment
· Must pass Flavorman’s new employee background check.
