Cabot Citrus Farms
Cabot’s first U.S. destination, Cabot Citrus Farms, is situated on 1,200 acres of rolling land and will include Cabot’s signature combination of world-class golf, luxury accommodations and real estate opportunities. Opening in 2023, Cabot Citrus Farms will feature two revitalized 18-hole courses, a par-3 course, a new clubhouse and extensive practice facilities. The property is a short 50-minute drive from Tampa and an 80-minute drive from Orlando. While close to urban amenities, the property sits in the central-west region of Florida aptly known as the Nature Coast. Visitors will delight in one-of-a-kind experiences including exceptional hiking, biking and nature trails at neighboring Withlacoochee State Forest, spring- fed rivers and bountiful lakes at Crystal River, and world-class fishing in the Gulf of Mexico.

As a key member of the Cabot Citrus Farms team, our Executive Sous Chef will be instrumental in building on the Cabot legacy of world class experiences. The Executive Sous Chef serves to support the building, development, and growth of the culinary offerings at Cabot Citrus Farms. The Profile
Reporting to Cabot’s Executive Chef, the Executive Sous Chef will embrace passion and purpose, with a love of food and excel in the hustle and heat of the kitchen. The Executive Sous Chef adds value to the Cabot leadership team by bringing our food program to life and inspiring your team to care, work hard and deliver on the brand’s mission to “Create Magical Places Where Remarkable Memories are Made”.
Joining a new and growing team, this role will be a member of the pre-opening team. Ensuring facility and service readiness. Areas of responsibility include meticulous budget management, inventory control including purchasing and receiving, developing and naturing professional relationships, training and mentoring with positive and team-oriented communication.

Key Responsibilities
- Work alongside a team of Cabot leaders to ensure that resort consistency and vision are met and exceeded
- Work closely with culinary and front-of-house leaders to build a world-class F&B program for the resort, its Cabot team members, and our guests
- Recruit and select culinary team members who proudly represent Cabot, using scenario-based interviewing and hiring practices
- Grow and retain top culinary performers at Cabot through differentiated coaching and leadership
- Develop and maintain a ‘food bible’ for all F&B team members, considered an essential accompaniment to a menu change. The food bible will include and not be limited to the recipes and images of all dishes served.
- Send daily service reports, reservations logs, and T&C related processes
- Support inventory, purchasing, and receiving of products
- Ensure sound financial performance through labor management and food cost control
- Adhere to schedule and payroll metrics
- Set goals and objectives to improve the kitchen’s performance and efficiency
- Run efficient food storage, prep and rotation systems
- Run a clean and organized culinary operation that meets and exceeds health & safety standards
- Oversee the upkeep & maintenance of all kitchen equipment and facilities
- Comply with and maintain all specified kitchen standards
Qualifications
- A minimum of 10 years’ culinary experience with at least 3 years’ experience in a senior culinary leadership role
- Degree or diploma in the culinary field or equivalent industry experience is required
- Demonstrated creativity and leadership experience
- Commitment to abide by all occupational health and safety standards
- Knowledge of and compliance with all Fire Safety Plans and Regulations
- Experience using systems and technology to effectively track and submit team members approved hours by deadline for biweekly payroll
- Ability to run a high-volume service, including but not limited to expediting
- Excellent communication, organizational, and interpersonal skills
Physical Demands
- Spending long hours walking, standing, and using knife skills
- Frequently lifting and carrying 50 - 100 lbs
- Occasional ascending and descending of stairs and ramps
- Occasional kneeling, pushing, pulling, and lifting
- Working in a hot, intense kitchen producing a significant volume of food
