$90,000 to $100,000 base compensation.
Direct and oversee all culinary operations, to include, but not limited to, production of all hotel meals, food quality and presentation. Compliance with all safety and sanitation standards and regulations, team member productivity and performance. Implementation of policies and procedures, cost controls and overall profitability.
Create and implement new menus and individual menu items for outlets based on current food trends and regional tastes.
Interact with guests and clients to monitor and assess menu satisfaction.
Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards.
Perform management duties including, but not limited to systems management, forecasting, report generation, department management and meeting participation and facilitation.
Monitor and develop team member performance to include, but not limited to providing supervision and professional development, scheduling, training and evaluations.
Hands on management of daily operations of all food outlets including: planning menus, maintaining financial responsibility for menu mix. Analyze menu and food costs and the preparation of cost and quality efficient menus/specials. Prepare reports regarding food and menu analysis.
Oversee inventory management to assure all outlets are adequately supplied at all times. Perform inventory requisitioning and purchasing. Maintain effective vendor relationships.
Requirements
The ideal candidate will have:
three years culinary arts experience after graduation from accredited culinary school or equivalent work experience in hotel or catering environment.
Previous experience in a management role required.
