Executive Chef
Hutton Brickyards is looking for a passionate Chef with experience creating the support structure needed for F&B outlets. Someone who wants a long career at Hutton Brickyards, who knows how to build teams, develop, coach, and mentor staff. A seasoned professional who loves to work hard, is never afraid to get their hands dirty, and knows days and weeks will be long during the “season”. Hutton Brickyards strives to provide a relaxed, lovely, casual dining experience for our guests, of which excellent consistent food and / drink is only one part.
We are seeking a dynamic and experienced leader to oversee the culinary operations of the two seasonal restaurants, guest grab and go, and corporate event catering. Our Chef must have a proven track record in managing resort F&B, financial management, staff development, and a demonstratable history of managing and motivating the associates on the F&B team.
Responsibilities:
- Execution of owner’s vision.
- The Executive Chef is responsible for managing and directing all aspects of the property's culinary operations.
- Effective management of day-to-day operations including staffing, training, budgeting, ordering, and forecasting.
- Recruitment and retention of new team members, support, development, and training.
- Ensuring quality, consistency are the highest level while maximizing profit.
- Reviewing staffing levels to ensure that guest service, operational needs, and financial objectives are met.
- Forecasting business levels and product procurement.
- Manage labor budgeting and weekly scheduling.
- Oversee the production and execution of corporate banquets with emphasis on quality and adherence to all food handling and sanitation standards.
- Performing administrative tasks, including inventory and departmental P&L oversite
Job Requirements
- The ideal candidate will have a culinary degree along with resort F&B experience.
- Candidates without a culinary degree, but with extensive culinary work experience, will be considered.
- Resort experience with a similar organization's level of service and operation is preferred.
- Proven budget consciousness.
- Be able to demonstrate leadership ability in managing and motivating the associates on their team.
- Excellent knowledge of BOH systems, ordering and inventory, and computer software programs (MS Office, restaurant management software, POS).
- Superior Communication and leadership skills.
