Job description

MOLLIE ASPEN is a new, 68-room boutique hotel that occupies a prime location on Paepcke Park in the heart of Aspen, Colorado.

Designed by award-winning studio Post Company, MOLLIE's interiors are subtly inspired by the Aspen tradition of being firmly grounded while gazing abroad - a seamless blend of understated luxury and residential comfort. The property holds a quiet confidence and commitment to a reduction of excess with interiors that thoughtfully utilize native materials from Aspen and the wider Western region, accentuated with natural woods, earthen ceramics, and hand-dyed textiles. MOLLIE’s lobby fosters an inviting atmosphere for visitors and locals alike, where the mix of differing personas is celebrated and upheld.

The hotel's food & beverage programs are spearheaded by Gin & Luck, the group behind the critically acclaimed Death & Co. brand and consists of a lobby bar and restaurant with year-round outdoor seating and a laid-back all-day café. Set atop MOLLIE's top floor is a rooftop spa pool and terrace that transforms into an intimate lounge by night, with unobstructed views of Aspen Mountain. MOLLIE Aspen has been developed by HayMax Capital, a leading local development firm, specializing in Aspen hospitality and residential development.


Job Description:

We are searching for a Director of Food and Beverage capable of overseeing multi-outlet operations, managing staff, monitoring inventory, and implementing successful marketing strategies. This individual will oversee an all-day café, restaurant & bar, and unique rooftop bar concept. The perfect candidate should possess excellent leadership skills, extensive Food and Beverage knowledge, and the motivation to promote and manage Aspen's most exciting food & beverage program.

Pay Rate: $125,000-$145,000 DOE

  • Potential flexible bonus and profit sharing


Job Responsibilities:

  • Curate and maintain an engaging and welcoming atmosphere in MOLLIE Aspen's Food and Beverage outlets
  • Responsible for the short and long-term planning and leadership of the Food and Beverage operations in the front and back of the house
  • Oversee day-to-day Food and Beverage operations, including maintaining floor presence, purchasing, controlling cost of goods, inventory levels, supplies, expenses, and labor
  • Develop, recommend, and maintain budget and marketing plans and manage within those approved plans
  • Uphold exemplary standards of leadership and professionalism as a vital member of the executive committee
  • Manage all department systems to include but not limited to, ADP, Silverware, OpenTable, and Craftable
  • Spearhead recruitment, screening, coaching, and retaining a quality, high-performing team
  • Set work schedules according to business demands while maintaining target labor costs
  • Ability to perform all front and back of house functions including but not limited to opening and closing, food preparation (In case of emergency), and cleaning procedures
  • Deliver a unique guest experience through high-quality products and guest service
  • Oversees all food beverage for receptions and special events
  • Ensures the hotel outlets are in compliance with all Food and Beverage regulations
  • Act as Manager on Duty as assigned
  • Assists with other tasks and/or responsibilities as needed


Knowledge, Skills, and Abilities:

  • Excellent guest service and problem-resolution skills
  • Expert understanding of restaurant Point of Sale (POS) systems. The ability to program and troubleshoot is preferred
  • Ability to handle multiple tasks and work under pressure
  • Ability to work flexible schedules, including weekends, evenings, and holidays
  • Strong leadership and interpersonal skills


Quality Control and Guest Satisfaction:

  • Conduct regular inspections and tastings to ensure that all beverages and culinary items meet MOLLIE standards of taste, presentation, and quality
  • Respond promptly and effectively to guest feedback and concerns, striving to exceed their expectations


Collaboration and Communication:

  • Collaborate with other departments, such as front-of-house staff and management, to create a seamless and exceptional dining experience


Education and Experience:

  • Bachelor’s degree or equivalent
  • 4+ years of work experience in hospitality
  • Multi-outlet restaurant experience in a hotel
  • The ability to move, lift, carry, push, pull, and place objects that weigh 25 pounds or less without aid is required. Assistance will be necessary for objects weighing over 50 pounds
