Possible course options:
**Priority – Principles of Nutrition (3 credits; both online and in-person)
Community Nutrition (3 credits; in-person)
Professional Practice in Nutrition (3 credits; in-person)
Teach students basic knowledge of food nutrients; functions, interactions, and balance of carbohydrates proteins, lipids, vitamins, minerals, and water in normal human physiology; nutrient deficiency diseases; energy metabolism; nutrition and fitness. Three-credit lecture course. May be offered both online (asynchronous) or in-person.
Community Nutrition:
Teach students the role of nutrition in health promotion and disease prevention through an examination of health and nutrition policy, programs, and population data. Emphasis in this course is placed on the information and skills necessary to solve nutrition problems in local, state, and national communities. Three-credit lecture course. In-person course.
Professional Practice in Nutrition:
Teach students about the various roles of nutrition professionals within the broader healthcare system including inter-professional collaboration for comprehensive care. Provide students with an overview of nutrition careers in clinical, community, foodservice management, and business settings and emphasize historical, legal, and ethical considerations for professional practice. Three-credit lecture course. In-person course.
- Master’s or Doctoral Degree in Nutrition or related field
- Registered Dietitian/Registered Dietitian Nutritionist
- Previous experience teaching in a higher education environment
- Recent dietetic practice experience
- Knowledge of and commitment to the mission of La Salle University
