The Place:
Palma is a 22 year old family owned gem located at 28 Cornelia Street in the West Village. We are a bustling traditional Italian restaurant that has very unique events capabilities.
Your key responsibilities:
As the Pastry Sous Chef, you will report directly to the Executive Chef at Palma.
- You will be responsible for executing dessert items, pastries, cakes, and our sourdough bread for our restaurant and private events in-house, while ensuring superior quality, consistency, and the maintenance of recipes, portion specifications, and standard preparation procedure for all dishes.
- You will help to develop recipes with a strong emphasis on seasonal produce and culturally driven, high quality ingredients, while staying conscious of waste and inspecting all raw materials to ensure quality standards are met.
- You will support our Executive Chef with general inventory, compiling order list and placing orders with suppliers, prep sheets and kitchen team schedule;
- You will follow and maintain Palma’s recipes and techniques for food preparation and presentation, which help to ensure consistently high quality and to minimize food costs
- You will maintain and track our pastry inventory;
- You ensure kitchen operations can run smoothly and efficiently with a thoughtful mind toward guests and owners, as well as the team at Palma;
- You maintain and supervise compliance with all Health & Safety practices at all times, as these relate to the kitchen and culinary team;
- You promote a culture of cleanliness, responsibility and accountability.
Our requirements:
- Working knowledge of authentic Italian pastry and prior experience in baking bread with natural methods required
- Fluency in English required
- Fluency in Spanish strongly preferred
- Food Handlers Certificate
- Strong organizational and time management skills
- Excellent communication skills and a friendly attitude
- Ability to work in a fast-paced environment with a high level of attention to detail
- Ability to follow procedures and take directions
- Ability to work flexible hours, including evenings, weekends, early mornings and holidays.
- Ability to lift and carry up to 50 lbs.
- Constant standing, walking, bending, reaching, and repetitive motions.
Salary: 80k - 85k DOE
