Pastry Cook

• Prepare sweet items, pastries, cakes, ice creams, sorbets, fruit compotes, chocolates and show pieces according to guest orders and banquet event orders in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.

• Date all food containers and rotate per Standard Operating Procedures (SOP)

• Start food items that are prepared ahead of time, making sure not to prepare over estimated need s

• Practice sanitation standard. Make sure that all perishables are being kept at the proper temperatures

• Properly portion all items on assigned station

• Control food waste, loss, and usage per SOP. Assist in setting up plans and actions to correct any food cost problems

• Check pars for shift use, determine necessary preparation, freezer pull , and line set up. Note any out-of-stock items or possible shortages

• Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables
  

Preferred Qualifications and Skills:

• Culinary degree preferred

• Minimum one year pastry or related work experience

• Must be able to work as part of team

• Must be able to work a flexible schedule

• Strong ability to prioritize, organize, and manage competing priorities
