Purpose of Position

This position is responsible for growing the existing Nutrition and Foodservice Professional Training program and looking for other opportunities in the field of Nutrition Certification. The Nutrition Certification program includes non-credit course offerings, such as test- prep courses and continuing education (CEU courses) for Dietary Managers, School Nutrition, and Hospitality Management. This position is also responsible for course development in these areas and any other nutrition opportunities, in order to keep courses updated and relevant, and as new niche markets arise.

Duties & Responsibilities

Provide direction and coordination for the existing Nutrition and Foodservice Professional Training courses and continuing education courses in the area of nutrition certification.

  • Review and interpret national and state regulations in regards to credentialing, licensing or certification for the nutrition professionals we serve.
  • Lead and complete the course(s) setup in the appropriate Learning Management System.
  • Review each online and correspondence course for quality and accuracy.
  • Monitor evaluations and analytics (when available) to look for improvements in the course(s).
  • Keep up-to-date on course technology and implement changes when needed.
  • Work closely with instructors to keep up to date on grading individual assignments and student progression.
  • Complete the appropriate applications and annual reporting, by required due dates, to receive on-going course approval (ANFP and other appropriate regulating bodies).
  • Work with SRS, data, finance, and marketing teams to establish the best procedures and protocol for the delivery of the course(s) to our students and payments to the instructors.
  • Work with directors and legal counsel to determine the most appropriate contract terms and conditions for course faculty members.
  • Hold project launch meetings as appropriate, to keep OEL team members up-to- date on course happenings and launch dates.
  • Work with marketing team and Communications Coordinator to develop a website presence and appropriate marketing avenues.
  • Look for ways to improve each course during course re-write time periods to better meet student needs.
  • Lead Advisory Board meetings on a regular basis (at least twice per year).
  • Plan, organize and implement at least one faculty recognition luncheon and program each year.
  • Assist with annual budget development, annual goal development, and monthly budget and goal review process.
  • Work with students and faculty to remedy their issues and answer their questions.

Provide leadership for growth in evolving markets and new opportunities for nutrition certification programs.

  • Work directly with Associate Director, Director, industry leaders, practitioners, and faculty to determine new course development.
  • Work directly with instructors and campus faculty to determine new course development.
  • Be aware of changes occurring within various nutrition and foodservice professional fields looking for opportunities for growth and potential threats that could impact the programs.
  • Garnish approval and review each online and correspondence course for quality.
  • Conduct research to determine viability of new courses.
  • Recruit, contract, hire and train appropriate instructors for new course development.
  • Work with instructors and instructional designers to design the most effective and efficient approaches to meeting the course and lesson learning objectives for online delivery.
  • Research outside vendors to determine appropriateness of partnering to increase our course offerings.

Participate as an active team member within the Office of Extended Learning, Teaching Transformation and Development Academy (TTaDA) and the University as a whole.

  • Participate in committees, task forces, and attend conferences and national events to enhance professional development as appropriate and in balance with work responsibilities.
  • Demonstrate to others the professional conduct expected of all Extended Learning and TTaDA team members.
  • Work with other OEL and TTaDA team members to create procedures and processes that can improve overall OEL team cohesiveness.
  • Maintain a high level of productivity regardless of which work environment you are working within.
  • Work with UND departments to enhance skills that will be beneficial to our program area upon implementation.
Required Competencies
  • Knowledge of market research and program evaluation.
  • Familiarity with online learning and learning management systems (such as Blackboard).
  • Demonstrated communication skills – including Oral: Articulating ideas clearly, concisely, and persuasively, showing sensitivity to one’s audience, and moving people to action. Written: Producing documents that are clear, concise, and appropriate to the task, focused and well organized. Listening: Actively listens to recognize and clarify verbal and non-verbal messages.
  • Computer proficiency in MS Word, Excel, PowerPoint, internet, and e-mail.
  • Demonstrated ability to think creatively, solve problems, and make sound decisions.
  • Experience building collaborative relationships and able to work collaboratively within a team environment.
  • Demonstrated ability to be able to work in a changing environment that is heavily focused on student success and interaction, with evidence of being a self-starter.
  • Demonstrated ability to work in a high activity environment while managing multiple priorities and deadlines required.
  • Demonstrated organizational skills and ability to be detail oriented.
  • Knowledge and understanding of program development/research and needs assessment.
  • Travel will be required.
Minimum Requirements
  • Bachelor’s Degree in Dietetics and Nutrition
  • Registered Dietitian (RD, RDN) or RD eligible
  • Two years of work experience in nutrition, foodservice, and/or dietetics.
  • Two years of work experience working with a CDM, CFPP.
  • Demonstrated experience in customer service.
  • Successful completion of a Criminal History Background Check

Preferred Qualifications
  • Master’s Degree in nutrition or related field.
  • Demonstrated experience in budget management.
  • Experience with dietary manager training, school nutrition, and other nutrition certificate and test prep courses.
  • Demonstrated experience in teaching and/or curriculum development.
