Must have experience dealing and following Department of Health Regulations to ensure a A at all times. This position is available immediately to the right candidate. Spanish Speaking is a plus.
Brief Position Requirements
- Experience managing a diverse kitchen staff in a restaurant
- Purchasing, inventory management & food cost control experience
- Computer experience is a plus
- Culinary, operational, and management experience
- Ability to interact with the general public, guests, supervisors and employees with tact, courtesy and gracious hospitality
- Ability to assist with product acquisition and menu development
- Ability to effectively supervise, coordinate and motivate kitchen staff
- College and/or culinary training and/or extensive cooking and production experience
- Ability to effectively manage employee schedules, food orders and food quality, sanitary inspections, and kitchen equipment (including stoves, refrigeration, slicer, knives, and dish machine etc.)
- Trained and has an updated manager serve safe certificate
- This is a full-time position. This position requires night, weekend, and holiday availability.

Duties & Responsibilities
- Managing inventory so that all necessary ingredients are stocked for service
- Assists the kitchen in all foodservice operations and day-to-day operations of the kitchen
- Hiring new staff and providing training to facilitate quick acclimation
- Streamlining the kitchen processes to maintain prompt service times
- Working with the Head Chef to develop and maintain the restaurant menu
- Monitors kitchen operations to ensure compliance with health and fire department regulations
- Ensures compliance with state, federal, and local food handling requirements and standards
- Creating schedules for all kitchen staff
- Tracking kitchen finances to identify areas of potential waste
- Assists in the implementation and management of kitchen and restaurant policies and procedures throughout the scheduled shifts
- Completes the duties of a line cook when needed, and is capable of performing the duties of all kitchen positions
- Ensures products are stored at the correct temperatures and the recipe books are up to date with current menu items, portions, and ingredients
- Ensures utilization of daily prep sheets and meat/fish yield sheets daily and that product counts are recorded accurately daily. Participates in weekly inventory process.
- Anticipates, identifies, and corrects any issues with inventory, systems, and staffing
- Monitors labor costs to attain budgeted goals within restaurant policies and procedures
- Participates in the hiring process by conducting interviews and making hiring recommendations
- Assists in completion of all back-of-house employee 30-day and annual reviews
