The Lead Cook applicant will have experience in all areas of food service delivery. This position will cook and provide delicious, nutritious meals and snacks for campers and guests. This position will have experience with purchasing, food preparation, nutrition, sanitation, personnel management, customer service, and record keeping. The Lead Cook will work closely with all James 4-H staff while providing the highest level of food service, hospitality, and customer service to all Camp participants.

The James 4-H Outdoor Learning Center is a property of the University of Arizona and offers modern facilities that are clean and comfortable. Our 124-bed camp has modern heated cabins with restrooms and shower facilities easily accessible. We offer a spacious dining hall, patio, fire pit, and various activity areas for programming and a spacious lawn for play and learning. Additionally, the camp is surrounded by national forest which provides us with many additional educational spaces from forest to a perennial stream. The camp season is typically from April 15 - October 15 of each year.

Duties & Responsibilities

A. Food Prep and Cooking

  • Plan, prepare and serve food that meets special dietary requirements of guests(gluten free, dairy free, vegetarian, vegan, allergy-free, etc.). 
  • Minimize food waste through menu planning and proper storage.  
  • Establish standard recipes that provide consistency regardless of who iscooking. 
  • Develop and implement new recipes, culinary techniques, and presentations asneeded. 
  • Develop menus and purchase food within approved budget. 
  • Develop weekly/weekend menus that are simple and healthy.
  • Assist in the storage, preparation, serving, and cleaning responsibilities of the Food Service Operation.
  • Ensure high quality and appropriate quantity of meals and snacks.
  • Follow strict time scheduling for attendance and performance of duties.
  • Maintain appearance and hygiene standards in the kitchen.

B. Organization and Safety

  • Organize kitchen and storage for cleanliness, efficiency, and codecompliance.
  • Ensure adherence to safety and sanitation requirements in the kitchen, dininghall, and other food services area. 
  • Connect with guests to confirm satisfaction with food. 

Knowledge, Skills, and Abilities:

  • Ability to multitask.
  • Ability to properly monitor cooking times and maintain meal schedule.
  • Strong culinary knowledge and ability to maintain all standards of food safety.
  • Ability to maintain food quality consistency.
  • Flexible schedule and ability to fill in when needed.
  • Skill in working with special dietary needs and allergies.
Minimum Qualifications
  • Bachelor's degree or equivalent advanced learning attained through professional level experience required.
  • Minimum of 3 years of related work experience or equivalent combination of education and work experience required.
Preferred Qualifications
  • Bachelor's degree in culinary arts, Hospitality Management, Business Management, or related field  
  • Experience in cooking/dining services in a camp, retreat and/or conference center setting.
