Job Description
Follow instructions and established procedures to perform duties. Exercise judgement to plan and perform a variety of operations to process quality menu items and accompaniments in large volume batches while following strict sanitation policies and procedures.
Qualifications
Advanced knowledge of cooking techniques and procedures equivalent to 1-2 years of formal food service training or equivalent work experience is necessary. Must have good organizational skills and a strong knowledge of sanitation procedures.
Job Specific Qualifications
Must have experience working with fresh dough products. Must have the ability to read, write, do simple math, use calculator, food thermometer and follow directions.
Responsibilities
Plan and coordinate the preparation of volume batches of food for use in all areas of Syracuse University Food Services. Prepare assorted fresh dough pizzas working with fresh dough. Food Service Production System (CSI) including service records and food production sheets. Proper storage of food items, cold vs hot, raw vs cooked. Observe safety and health regulations and maintain highest standards of sanitation.
Physical Requirements
Lifting between 15-30 pounds, bending, stooping, work with dust fumes and solvents on a daily basis.
Tools/Equipment
Operate a variety of equipment including deck ovens, mixer, food slicer, steamer, steamer jacketed kettle, convection oven, tilt brazier, deep fat fryer, cleaning of all kitchen equipment/hoods, grills, slicers, etc.
