Food Service Manager 1
Helen B. Ratcliff Reentry Center | Seattle, WA

King County Premium:
The salary listed above does not include the additional 5% premium granted to all King County employees.

This position contributes to the agency's mission to improve public safety by positively changing lives by budgeting, planning, ordering, preparing and providing residents at a Reentry Center facility with nutritionally appropriate quality meals that meet the recommended daily allowance as specified in the Department's certified meal plan. Manages the FOOD SERVICE for the Reentry Center facility including supervising others engaged in planning menus, ordering, storing, and maintaining inventories of foods and supplies, preparing and serving meals, and planning and preparing modified diets and menus which conform with medical care programs. The FSM position supports the reentry purpose of providing individuals with tools and resources to successfully transition back into the community by ensuring residents have nutritious, balanced meals that supports their dietary needs.

Duties

Duties of a Food Service Manager 1 include, but are not limited to:


Manage and provide supervisory direction relating to operational effectiveness of the facility and kitchen

  • Inspects kitchen, dining, and food preparation areas to ensure proper food handling, sanitation, elimination of safety hazards, and proper use and care of equipment.
  • Maintain the kitchen budget, to include ordering of supplies. This includes, but is not limited to food, kitchen items chemicals, janitorial, cleaning supplies, gloves, toiletries, kitchen uniforms, and equipment.
  • Comply with DOH WAC’s by ensuring required temperatures are taken and logged on food and refrigerator and freezer systems.
  • Prepare meal plans, to include purchasing all needed food products for monthly, daily, weekly, special, and other menus; converts standard menus to fit needs.
  • Provide 3 meals each day.

Manage and provide supervisory direction relating to kitchen staff

  • Responsible for hiring for the positions under FSM supervision.
  • Conduct timely performance evaluations, ensuring proper coaching and training is provided. This includes monthly 1:1 meetings to provide timely reviews of performance and to provide support to employees.
  • Plan, assign and review staff schedules, including leave, overtime/compensatory time according to departmental guidelines and applicable Collective Bargaining Agreements.
Participate in the preparation and service of all food on a shift
  • Check food product during and after preparation, ensuring appropriate quality standards are met and adequate quantity has been prepared.
  • Follow basic safety practices to avoid hazards and accidents. Immediately report hazards or injuries to the Reentry Center Manager or designee. Comply with DOH WACs.
  • Monitor, maintain, and track the knife and tool inventory.
  • Maintain meal count registers and tool logs.

Qualifications

Required Qualifications

  • Two (2) years of supervisory or lead work experience in large-scale food operations involving work in planning, organization and production of meals, food procurement, storage, preparation, or closely related work.
  • Current food handler's permit.

OR

  • A Bachelor's degree with major work in restaurant/hotel management, or a closely related field.
  • Current food handler's permit.

OR

  • One (1) year experience as a COOK 3 or Dietician or equivalent.
  • Current food handler's permit.
  • Knowledge of management of large-scale food preparation and services, preparation of reports, organization, scheduling, and work assignment, inventory methods and food stores maintenance.
  • Ability to supervise train others in methods of cooking and FOOD SERVICEs, plan variety of nutritious menus to fit needs and limitations on food preparation, establish and maintain cooperative working relationships with others, follow written and oral instructions.
