Hampton's mainstay, Moby's, has returned for another season. Moby’s is seeking experienced Sous Chef with a great attitude and the ability to create a strong work culture.
JOB DUTIES AND RESPONSIBILITIES:
- Food preparation, production and control for all food for lunch, brunch, and dinner
- Hire, orient and train all BOH staff to ensure that the highest standards of quality are met.
- Maintain all food inventory: order, receive and account for all food products and purchases.
- Control food cost by maintaining food standards at reasonable cost through liaison with the vendors and corporate accounting to check prices, market price fluctuation, quality, etc.
- Be responsible/accountable for the departments’ operating budget.
- Ensure that sanitation standards as set forth by local, state & federal Health Department regulations are in compliance as well as the cleanliness and organization of the kitchen and its equipment
- Monitor and maintain use of safe food handling procedures as well as a safe working environment by using correct food handling skills and food safety guidelines
REQUIRED EXPERIENCE, SKILLS and QUALIFICATIONS:
- 3+ years of previous experience as a Chef or Sous Chef.
- Seasonal experience preferred but not required.
- Must have NY or Suffolk County food handlers certification, or willing to obtain certification upon hire.
- Food ordering and inventory knowledge mandatory.
- Strong financial and computer skills; experience working with and understanding of P&L's.
- Good knowledge of food trends with a focus on quality, production, food cost controls, and presentation.
- Ability to lead a team, and positively influence employee behavior.
