Job Opportunity:
We are currently looking for a motivated Executive Sous Chef to join our exceptional Culinary team.
Responsibilities:
The Executive Sous Chef will work closely with the Executive Chef to ensure optimal food service across the property within budgetary constraints. Key responsibilities include:
- Supervising the Banquet kitchen and overseeing the preparation and presentation of foods by chefs, cooks, and pantry personnel.
- Managing staffing for all kitchen areas, preparation areas, employee cafeteria, and supervising employees within these areas.
- Maintaining an adequate supply of all food items, ensuring purchases align with specifications set by the Executive Chef or Central Purchasing.
- Inspecting storage areas to uphold sanitation standards and ensure proper functioning of equipment.
- Ensuring sufficient quantities of pre-prepared items are available, stored appropriately, and maintain quality.
- Requisitioning only the quantities of items scheduled for use from the storeroom.
- Overseeing the proper breakdown of prime cuts of meat, minimizing waste, and ensuring optimal utilization of meat scraps.
