Colao’s Ristorante is a fine-dining Italian restaurant that has been located on the corner of West 29th and Plum Streets in Erie, Pennsylvania for 25 years. We are a locally owned, well-established restaurant looking for an experienced Executive Chef to join our team!
Full-time, 5-day work week with scheduled shifts starting at 12pm, 1pm or 2pm until closing (approx. 8-to-9-hour shift), Monday through Saturday, closed on Sunday.
Job Requirements:
- Utilize comprehensive knowledge of food products, standard recipes, and preparations to develop new menu options consistent with current menu style, seasonal changes, and customer demand.
- Set an example of excellence to all employees in terms of attendance, morale, appearance, and work ethic.
- Ensure that kitchen activities operate in a timely manner by setting preparation standards and times for efficiency.
- Weekly analysis of food costs and related issues to resolve, if needed, meet budgetary goals; develop action plans for achievement of goals.
- Manage and create the culinary management weekly schedule so that proper coverage is maintained while keeping payroll costs in line.
- Participate in management meetings on Tuesday of each week to discuss prior week’s sales, employee engagement, areas for improvement, and new ideas for your department or beneficial improvements to the overall restaurant.
- Manage kitchen staff and delegate specific duties to prep/line cooks for efficient operation of the kitchen to define staff performance and requirements.
- Ensure proper receiving, storage, and rotation of food products to exceed Health Department regulations.
- Develop, delegate, and manage weekly kitchen cleaning schedule.
- Monitor, record, and order inventory, working in conjunction with various food distributors.
- ServSafe Certification
- Recruit (and if need be, train) new kitchen employees to meet restaurant and personal culinary standards.
- Take charge of the kitchen and make it your own.
Experience: Minimum THREE (3) years of hands-on Executive Chef experience in an upscale, fine-dining environment
Educational Requirements: Any combination of education, training or experience that provides the required knowledge, skills, and abilities. High school education required; culinary degree preferred.
Compensation: $55,000.00 per year; detailed package expanded upon interview.
