Primary mission:  

The Executive Chef is responsible for the day-to-day operation of the hotel’s food and beverage outlets. Oversees and manages culinary operations to meet production, presentation, and service standards. Applies culinary techniques to food preparation and manages the final presentation and service of food. Day-to-day oversight of payroll, schedules, ordering, inventory, and supervisory tasks associated with overseeing a culinary team. Cooking will be a primary role, in addition to leading the culinary team. Close interaction with front of house lead server, Area Food & Beverage Manager and Hotel Manager

 

SCOPE OF WORK + TEAM (insert who position report to and scope of duty)

  • Reports to Hotel Manager
  • Supports Hotel Manager in developing promotional ideas
  • Part of the special events team and catering

 

 

RESPONSIBILITIES  

  • Manage and Coordinate activities of associates engaged in preparing and cooking food.
  • You must have knowledge of and be able to perform in any line position, as needed.
  • You are expected to offer guidance and direction to line cooks on a continual basis, particularly in the execution of food for large events, private parties.
  • Ensure raw ingredients are available and prepared for use in recipes and food preparation methods are used advises associates in the preparation, proportion, and garnishing of foods.
  • You must be able to deal with all associates in a courteous and professional manner and have a strong sense of urgency and remain alert in a busy environment.
  • You ensure associates are, at all times, attentive, friendly, helpful and courteous to guests, associates and other managers by maintaining close communication links with all associates, seeking input regarding food and beverage issues and acting as a motivating influence.
  • You would be required to immediately follow up on accidents, problems or guest complaints in the Food & Beverage Department.
  • Ensure Food & Beverage Staff has up to date TIPS (Serve Safe) and/Food Handling Certifications in main kitchen to present to Health Department Inspector if requested
  • Perform in the capacity of any position supervised.
  • You are responsible for all administrative duties, including but not limited to:
    • Scheduling
    • Ordering
    • New associate orientation
    • Training
    • Documentation (i.e. associate evaluations, write ups, new hire packets, and separation notices)
  • You ensure strict adherence to recipes and standards of quality for food served, including:
    • Freshness
    • Proper handling & storage
    • Proper use of techniques and cooking procedures
    • Taste
    • Portion Size
    • Presentation
Qualifications

EXPERIENCE:

  • Prior Experience:
    • 1+ year experience in a hotel or a related field preferred
  • IT Expertise:
    • Advanced knowledge of computer software (including Microsoft Office, outlook) and web analytics tools is preferred.
  • Education:
    • High School diploma or GED required; college degree preferred.
  • Subject Expertise:
    • Long hours sometimes require
    • Heavy work-Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently or constantly to lift, carry, push, or otherwise move objects.
    • Ability to stand during entire shift.
    • Must be able to convey information and ideas clearly.
    • Must be able to evaluate and select among alternative courses of action quickly and accurately.
    • Must be able to show initiative in job performance, including anticipating what needs to be done before it becomes a necessity.
    • Must work well in stressful, high-pressure situations.
    • Must maintain composure and objectivity under pressure.
    • Must be effective in handling problems in the workplace, including anticipating, preventing, identifying and solving problems as necessary.
    • Must have the ability to assimilate complex information, data, etc., from disparate sources and consider, adjust or modify to meet the constraints of the particular need.
    • Must be effective in listening to, understanding, and clarifying the concerns and issues raised by co-workers and guests.
    • Must be able to work with and understand financial information and data, and basic arithmetic functions.
    • Demonstrate a working knowledge of all property safety and security procedures as required maintaining a secure and safe environment for employees as well as guests.
    • Report any unusual occurrences and/or request to Supervisor.
    • Read and abide by all the regulations and rules of conduct stated in the Associate Handbook.
    • Must be service oriented with excellent customer service and sales skills
    • Must be able to effectively communicate to guests, management, and coworkers and read, write and understand the English language
    • Must be energetic and outgoing
    • Must possess excellent interpersonal and organizational skills
    • Must be able to follow directions with attention to detail, speed and accuracy
    • Must be a team player with the ability to work under minimal supervision
    • Must be able to multi-task in a fast-paced work environment
    • Must be able to understand and work with basic financial information and solve basic arithmetic problems
    • Must be able to type 45 wpm and have the ability to input data and access information on the computer
    • Must have proficient working knowledge of Microsoft Office, Opera; preferred.
    • Must be able to exercise confidentiality and discretion.

OTHER EXPECTATIONS:

  • Abide by payroll policies, procedures and rules of conduct as stated in the Springboard Hospitality Associate Handbook.
  • Demonstrate a working knowledge of all company safety and security procedures.
  • Travel required: As needed for hotel familiarization, content creation shoots and to meet with colleagues.
  • Hours Required: Must primarily work during Springboard Hospitality business hours, Monday - Friday 8am - 5pm (PST), while understanding that the hotel business functions 24/7 and some weekend or holiday work may occasionally be required.
