The Catering Sales Manager is responsible for prospecting, selling, negotiating, and servicing events. To attend industry and networking events, conduct telemarketing and administer advertising. Conduct tours of the facility, menu tastings and meetings with clients. Communicate between the client and the hotel throughout the preplanning and execution phases. Responsible for the successful outcome of programs from pre-arrival through to post-departure.
- Solicitation of direct-selling in the local, social and corporate catering market.
- Utilizes strong negotiation skills and creative selling abilities to successfully close business and negotiate contracts.
- Possesses a comprehensive understanding of the market, including competitors' strengths and weaknesses, economic trends, supply and demand, and effectively leverages this knowledge in the sales process.
- Maximize food, beverage and auxiliary revenues by selling menus, experiences, and activities.
- Executes and manage the terms of a contract per Fontainebleau standards.
- Accurately forecast Banquet revenue, covers and average checks based on event classifications.
- Communicate all details of event to all departments via resume format and banquet event format, in a thorough and timely manner.
- Establish close working relationships with clients and Fontainebleau team members.
- Efficiently reserve and utilize function space to maximize revenues while minimizing space consumption.
- Maintain a high level of service by continually providing accurate and timely information and feedback to all supporting departments.
- Adhere to all standards and procedures as outlined by Fontainebleau.
- Maintain the integrity of Sales & Catering at all times.
- Additional duties and projects as assigned.
- Well organized and demonstrated strong problem-solving skills.
- Strong culinary, beverage knowledge and interest.
- Ability to develop strong professional relationships with clients, vendors, guests and employees.
- Ability to communicate effectively, establish and maintain effective working relationships with staff.
- Must be able to multi-task, work independently and maintain a positive attitude within a very busy environment.
- Understanding of computers and applications with a strong working knowledge of MS Word, MS Outlook, MS Excel, Salesforce, Social Tables, and Opera.
- Minimum of two (2) years of strong sales experience in the hospitality industry; working knowledge of REO or BEOs.
- Bachelor's Degree in Hospitality Management /Administration or related discipline preferred.
