JOB OVERVIEW: Assist the F&B Director with management and operation of the Food & Beverage Department while maintaining the high standards of Food and Beverage, quality, service, and marketing to maximize profits through outstanding customer service.
REPORTS TO:Food and Beverage Director/General Manager
ESSENTIAL JOB FUNCTIONS: Include the following; however, other duties may be assigned. 1. Ensure all operating and service standards are maintained throughout the Food and Beverage/Banquet Department.
2. Participate in required M.O.D. coverage as scheduled.
3. Initiate all necessary F&B related reports according to company standards.
4. Ensure that F&B employees are at all times attentive, friendly, helpful, and courteous to guest, all other employees and managers.
5. Attend daily BEO meetings.
6. Conduct beverage purchasing as needed.
7. Ensure that the quality and presentation of all food products are according to hotel hospitality standards.
8. Maintain a professional working relationship and promote open lines of communication with managers, employees, and other departments.
9. Use the hotel’s P.O.S. system to print reports; analyze reports generated.
10. Coordinate all food services activity ensuring high quality standards while maximizing profits controlling labor cost.
11. Ensures compliance with all health, safety, sanitation, and alcohol awareness standards.
12. Cultivate and maintain positive customer and employee relations.
13. Assist the F&B Director with administrative duties in a timely and efficient manner including scheduling and payroll to meet the daily needs of operation.
14. Assist in maintaining the liquor storeroom perpetual inventory and assures liquor control procedures are followed by the restaurant, bar, and room service staff.
15. Assist the F&B Director with recruiting and selecting potential new Food and Beverage staff and ensure a through orientation.
16. Evaluate staff at their workstations and periodically inspect all areas for cleanliness, proper sanitation, and monitor working condition of all equipment, fixtures, and facilities in the department.
17. Establish guidelines for customer service so associates understand expectations and parameters; utilize interpersonal and communication skills to influence and encourage others.
18. Meet with guests on an informal basis during meal service or upon departure to obtain feedback on the quality of Food and Beverage, service levels, and overall satisfaction.
19. Display leadership in guest hospitality; demonstrate excellent customer service through prompt and effective response to guests.
20. Identify the developmental needs of others, coaches, and mentors to improve their knowledge or skills.
21. Assists the F&B Director to provide guidance; build trust, respect, and cooperation among Food and Beverage Team members leading by example.
REQUIRED SKILLS AND ABILITIES: Good communication and interpersonal skills; must have command of the English language both written and verbal. Strong knowledge of F&B operations, service, wine, and Beverage preparation. Excellent mathematical abilities, to order, track inventory, control revenue productions, and other hotel Financial Statements. May be required to work the entire shift standing and moving about in the restaurant, bar and kitchen. Calm professional demeanor with the skills necessary to effectively deal with internal and external customers, some who will require high levels of patience, tact, and diplomacy to differ anger and resolve conflict. Supervisory expertise to plan, direct, coach, train, and discipline as necessary. Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.
