The number one priority for bussers is cleaning and setting dirty tables so we can seat more customers.
After that your priorities follow as such.
1. Whatever your manager asks you to get done
2. Whatever the chefs ask you to get done
3. Whatever the servers ask you to get done
This will help you prioritize what to do because it sometimes feels like everyone needs you for something all at once.
Okay, now that you’re done doing everybody else’s work here’s your work.
1. Clean and set dirty tables. This means wipe the entire top and sides with a clean warm sanitizing solution. Clean table accessories such as soy sauce bottles and table tents. Place napkins neatly on the table. Vacuum beneath table when necessary. Clean and push in chairs.
2. Refill water glasses at ¾ or less
3. Pick up dirty appetizer plates
4. Pick up menus
5. Keep floors spotless
6. Know table numbers
7. Expo drinks for servers (only if you are 18 or older)
8. Expo food for the bartender. (Servers deliver their own food unless they ask you)
9. Watch customers (you can usually tell if they need something)
