Vat Operator
Shift: 11:00 PM - 7:30 AM
Rotating Days Off (Subject To Change)
General Purpose: Pasteurize milk, add ingredients and cook vats according to recipe specifications. Run separator and homogenizer to obtain targeted recipe specifications.
Job Duties and Responsibilities:
- Add ingredients as needed for each recipe
- Adjust Casein as required as for each recipe
- Adjust the fat level as required for each recipe
- Sharpen HCV knives as needed
- Monitor the casein-to-fat ratio to maximize the potential cheese yield by determining the proper amount of fat to add to the available protein/casein in the milk
- Complete make-sheet accurately
- CIP HTST #1 after each production run
- CIP the Vats, Separator, Starter Tanks, Product Lines
- Curd and Whey lines as required per SOP
- Accurately issue ingredients on SAP
- Must be able to make line connections as needed for CIP and product run
- Change-over silos and tanks as required
- Participate in the 5S program
- Maintain work area according to 5S standards
- Maintain safe working conditions for employees and compliance with all state and federal regulations regarding health and safety issues
- Dedicate effort to safety as we expect every employee to leave work in the same condition as they arrive
- Follow all DFA good manufacturing practices (GMP) and work in a manner consistent with all corporate regulatory, food safety, quality, and sanitation requirements
- Exhibit the values and ethics of Dairy Farmers of America through honesty, discretion, and sound judgment
- Adhere to all DFA Quality, Safety and GMP policies and procedures and report any nonconformity
- Attend required training, including but not limited to, Safety, GMP, Hazard Analysis and Critical Control Point (HACCP), and Safe Quality Foods (SQF)
- Responsible for monitoring and taking corrective actions when necessary for a critical control point as part of the plant HACCP plan
- Ensure that all documentation is done correctly and turned in promptly

Pay
- Competitive pay based on experience - $24.83 to $29.40 per hour based on experience
- Rate includes $1.00 shift differential for hours worked between 6 PM and 6 AM

Requirements
Minimum Requirements:
Education and Experience
- High School Diploma or GED preferred but not required
- Must have basic computer experience
- Must have basic math skills
Knowledge, Skills and Abilities
- Must be able to explain production flow by the 4th week of training
- Must be able to pass skills evaluation test
- Must be able to obtain a State Pasteurization License
- Must be flexible enough to allow for changes in schedule due to production requirements and be able to work overtime as needed
- Must be able learn and work with the SAP program Must have basic math skills
- Must be able to read, write and speak English
