The Meat and Poultry Division enforces state and federal laws designed to ensure meat and poultry products sold to consumers are wholesome, unadulterated, and properly labeled. The Division inspects approximately 200 plants statewide for red meat slaughter/processing and poultry processing and operates a program "at least equal to" the USDA, Food Safety Inspection Service.
The incumbent serves as a technical consultant and advisor to the State Director. Manages inspection activities and custom exempt review activities in one-half of the State, periodically rotating between the Eastern half and the Western half of the State. Supervises Area Supervisors and provides guidance, and technical expertise on a broad range of complex inspection activities, policies, and methods related to the production and processing of meat and poultry products.
Serves as a staff professional dealing with new, unique and complex Hazard Analysis Critical Control Point (HACCP) plans and Sanitation Standard Operating Procedures (SSOP). Maintains a mastery of regulatory issuances and works to implement them fairly and consistently across the State as part of the "at least equal to" program.
Collaborates across work units within MPID, including the Technical Assistance Unit and the Compliance Unit to ensure a comprehensive approach to accomplishing MPID's mission. Works with the USDA FSIS District Office to address issues as they arise. Reviews and approves applications for new establishments and the official inauguration of inspection for all TA and State plants. Conducts courtesy reviews of potential new establishments.

- Knowledge of the principles and practices related to the production and processing of meat and poultry products.
- Extensive knowledge of laws, rules, regulations, policies and procedures pertaining to meat and poultry inspection including processing and sanitation inspection practices, HACCP and SSOP requirements, plant and equipment design and operations, and laboratory analysis.
- Working knowledge of current issues in the food technology and quality control field sufficient to participate in the planning and formulating of State programs and policies covering processed products.
- Experience performing, planning, and managing complex food science activities in processed products inspection.
- Skilled in the use of the Public Health Information System (PHIS) and Microsoft Office applications.
- Ability to plan and conduct reviews of HACCP and SSOP programs, analyze data, assess effectiveness of operations, and develop proposed changes in inspection procedures.
- Ability to analyze, interpret, and implement policy and procedural guidelines.
- Ability to establish and maintain working relationship with Departmental staff, Division staff, government officials, and the general public.
- Ability to plan, instruct and supervise the work of others.
- Must have normal color vision.
- Supervisory experience
