POSITION OVERVIEW

The Specialty Master Cook (Wok) will display expertise in wok cooking techniques, ensuring food quality according to department standards and ensuring the cleanliness and sanitation of work areas and equipment in accordance with Health Department standards.

ESSENTIAL DUTIES AND RESPONSIBILITIES

The following and other duties may be assigned as necessary:

  • Utilize extensive knowledge and proficiency in wok cooking techniques to prepare a variety of dishes according to established recipes and standards
  • Demonstrate mastery in controlling heat, stir-frying, tossing, and other essential wok cooking methods
  • Collaborate with culinary team to contribute innovative ideas for menu enhancements, focusing on wok-prepared dishes
  • Conduct research on new ingredients, flavors, and culinary trends to inspire creative additions to the menu
  • Ensure that all wok-prepared dishes meet the highest standards of taste, presentation, and consistency
  • Monitor portion control and maintain food quality throughout the cooking process
  • Effectively manage the wok station, including organizing ingredients, maintaining cleanliness, and ensuring proper equipment functionality
  • Coordinate with the kitchen team to prioritize orders and ensure timely delivery of dishes to guests
  • Provide guidance and training to junior kitchen staff, especially those involved in wok cooking techniques
  • Assist in inventory control by monitoring stock levels of wok-related ingredients and communicating replenishment needs to management
  • Comply with all food safety and sanitation regulations, ensuring a clean and organized work environment
  • Implement best practices for food handling and storage to maintain a safe and healthy kitchen
  • Temporary or permanent duties and responsibilities may be added to or modified as deemed necessary

QUALIFICATION REQUIREMENTS

  • High school diploma or equivalent required
  • Previous experience as a Specialty Cook with a focus on wok cooking
  • In-depth knowledge of various wok cooking techniques, ingredients, and flavor profiles
  • A keen eye for detail in ingredient preparation, recipe adherence, and maintaining a clean and organized workspace
  • Strong organizational and multitasking skills to manage a fast-paced kitchen environment
  • Ability to stand, bend, lift, and carry heavy items for extended periods during busy service hours
  • Familiarity with food safety regulations and best practices to ensure a hygienic and safe kitchen environment
  • Excellent communication skills and the ability to work collaboratively with other kitchen staff to achieve culinary excellence
  • A passion for culinary innovation and a willingness to contribute creative ideas to the menu preparation
  • Must be willing and able to work a flexible schedule to include nights, holidays, and weekends
  • Work in a fast-paced, busy, and somewhat stressful environment


SUPERVISORY RESPONSIBILITIES

This position does not have any supervisory responsibilities.

CERTIFICATES, LICENSES, REGISTRATIONS

Member must be able to qualify for licenses and permits required by federal, state, and local regulations.

LANGUAGE SKILLS

Ability to read and interpret documents in English, such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to read and communicate verbally in English. Written communication skills in English may also be required.

REASONING ABILITY

Ability to apply commonsense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

While performing the duties of this job, the Member is regularly required to stand and use hands and fingers to handle or utilize objects, tools, or controls. The Member must regularly lift and/or move up to 10 pounds, frequently lift and/or move up to 25 pounds, and occasionally lift and/or move up to 50 pounds, and must have the ability to push, pull, reach, bend, twist, stoop, stack, crouch, kneel and balance when performing job duties in varying work areas such as confined spaces.
