Overview: The primary purpose of this position is to create an enjoyable dining experience for the residents, staff, and visitors in our dining services and to assure that quality service is provided at all times. The Lead Cook ensures that all cooks are assigned their daily duties, checks on the quality and consistency of all cooked and raw product, and collaborates with the Sous Chef and Executive Sous Chef. This position reports to the Sous Chef.
Essential Job Functions:
- Prepares hot entrees, soups and vegetables
- Follows preparation sheets and provided recipes for dining room service, healthcare center, cafeteria, and special functions
- Responsible for hot food preparation including accompaniments and garnishes
- Performs advance preparation as indicated
- Serves eye-appealing, tasty food items by following provided recipes for preparation and plate service of food
- Completes food temperature checks for each meal
- Tastes all food items prepared
- Completes preparation records and stores food items properly at close of meal service
- Ensures that all hot food preparation and assembling is done in accordance with established procedures
- Cleans work area and equipment used in food preparation
- Follows safety and sanitation rules and practices
- Provides clean, safe and neat environment for residents, self and staff
- Maintain clean and professional appearance and use of hair nets and beard guards
- Adheres to company policies and procedures
- Attend departmental education and all required in-service training/education
- Maintain confidentiality of resident/family and facility information
- Maintain the highest standard of food integrity
- Represent the organization through professional demeanor and attitude
- Provide quality customer service in all interactions with residents, guests and staff
- Perform other duties as required
Qualifications:
- High school diploma or equivalent preferred
- 2-4 years cooking experience required
- Working knowledge of basic math concepts including measuring and proportion
- Ability to understand and follow both written and verbal instruction
- Comprehensive knowledge of food preparation and handling technique
- General knowledge of safety and sanitation rules and practices
