Positioned under the Food & Beverage Manager, the Mixologist at Yaamava' Resort & Casino at San Manuel is pivotal in enhancing the guest experience by curating an evolving, world-class spirits program across various venues. Ensuring profitability and aligning with enterprise objectives, this individual will craft unique beverage experiences while upholding the highest standards of service and compliance within the vibrant and dynamic environment of the resort and casino. This role is a blend of financial acumen, customer service excellence, and in-depth beverage knowledge, contributing substantially to the venue's allure and customer satisfaction.
Essential Duties & Responsibilities
1. Responsible for the training and development of spirit education for all corresponding front of house team members and leadership. Designs training programs to ensure high quality service that aligns with Yaamava' Resort & Casino brand standards and overall product knowledge. Additionally, is responsible for development and/or approval of all Division wide cocktail, spirit, and beer menus including but not limited to, comp set comparisons and pricing strategies.
2. The mixologist will be responsible for assisting Management with ordering, receiving, maintaining inventory and utilization of inventory systems, organizing, and selling of spirits. Works alongside team members to assist guests during their dining experience with spirit recommendations, pairings, decanting, and overall spirit service to ensure guest satisfaction. Along with creating innovative new cocktails, aligned with trends while establishing new trends as well.
3. The Mixologist will assist in managing the venue(s) to achieve budgetary targets/profits and minimizing beverage cost and expenses. Will be responsible for assisting Management by providing an explanation of unfavorable variances of spirit and beverage sales monthly to leadership.
4. Maintains accurate inventory of all stemware, glassware, decanters, coasters, and any other supplies as needed. Confirms replacement inventory while minimizing replacement cost. Monitors mishandling and/or damage to inventory items and responds accordingly to prevent future waste. Additionally, will introduce new cocktail equipment, processes and procedures that are cutting edge and state of the art.
5.Collaborates with the venues, ensuring menu items remain attractive to customers (as measured by customer satisfaction surveys and revenue generated), and verifying that food & beverage presentation meets the Yaamava' Resort & Casino brand standards.
6. Oversees all property spirit storage displays, while ensuring cleanliness, and sanitation standards are met. Works to establish preventative maintenance as necessary.
7. Ensures all beverage products are served efficiently and in accordance with Yaamava Resort & Casino standards presentation and Health Department regulations, in addition to verifying pour testing and recipe adherence of all bar staff.
8. Performs other duties as assigned to support the efficient operation of the department and assumes other responsibilities, duties, tasks, and assignments that contribute to the mitigation or response to any public health emergency.
Supervisory Responsibilities
Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring and training employees; planning, assigning reviewing and directing work; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Makes hiring decisions and designs individual development plans with succession planning in mind for all key roles.
Education/Experience/Qualifications
- Associates Degree in a relevant field required.
- Bachelor's degree in a related field is preferred.
- Minimum of three (3) years of experience as a bartender in a high-volume bar/restaurant/casino with high quality food, extensive beer, and spirits offerings in a high energy atmosphere required.
- Related, relevant, and/or direct experience may be considered in lieu of minimum educational requirements indicated above.
- Expertise in beers, wine, and all spirits.
- Must be familiar with a variety of concepts, practices, and procedures related to the field.
- Must possess strong knowledge of fine dining spirit stewarding and service, including food and beverage spirit pairing and upselling.
- Ability to frequently and efficiently train team members on spirits as they pertain to food and beverage.
- Strong understanding of pricing, budgeting, and cost controls.
- Ability to rely on experience and judgment to plan and accomplish goals.
- The ability to perform a variety of tasks given a wide degree of creativity and latitude is expected.
- Must be able to lead and direct the work of others to ensure efficient operations.
Certificates/Licenses/Registrations
- At the discretion of the San Manuel Tribal Gaming Commission, you may be required to obtain and maintain a gaming license.
- Must obtain and maintain a current Food Handler's Card within 90 days of employment.
- Will be required to obtain and maintain RBS Certification upon employment.
