Job Summary:
As a Lead Line Cook at Methodology, you will play a crucial role in our kitchen's day-to-day operations. Your leadership will be instrumental in maintaining the high standards of our culinary offerings both as an individual contributor and member of the chef team. You'll have the opportunity to unleash your skills and assist in perfecting new menu items for our ever-evolving weekly menu.
Key Responsibilities:
- High Volume Production: Ability to produce multiple recipes from start to finish at large scale.
- Kitchen Team: Be an integral part of the chef team in various hands-on day-to-day functions from preparation of vegetables to scaling recipes during production. Assist chef in maintaining accurate administrative duties such as maintaining and filling out prep lists and temp logs.
- Food and Inventory Management: Communicate food purchasing, ordering, and vendor management (quality), ensuring the availability, arrival, and storage of quality ingredients.
- Cost Management: Manage weekly food costs to meet spending targets and implement cost reduction strategies through FIFO, recipe management, and zero waste mentality.
- FIFO Process: Handle the entire FIFO process, owning and ensuring products are maintained in inventory from start to finish at the highest standard.
- Quality Control: Ensure all purchased ingredients meet company specifications and maintain a well-organized receiving process.
- Sanitation and Compliance: Maintain the highest level of cleanliness in compliance with health codes and company standards.
- Team Collaboration: Communicate effectively with the culinary team, Operations Specialists, and other departments for efficient production and food flow. Always focus on maintaining a high sense of professionalism and positive culture.
- Quality Checks: Perform regular quality checks, monitor tastings, sanitation, food cooling, and food storage.
- Recipe Management: Assist in QA recipes, and drive recipe adjustments as needed using the proper tools.
- Training and Enforcement: Instruct and teach proper food handling, production, storage, service, and conduct while enforcing company rules and regulations.
Qualifications:
- 3+ years of culinary experience.
- 1 year of buying or purchasing experience.
- 1 year of inventory management experience.
- 6 months in entry level management (for non internal promotions).
- Proficiency in various cooking techniques.
- Experience with kitchen equipment like convection ovens, robot coupe, immersion blender, and more.
- High Volume, batch cooking, and recipe/menu development experience, including dietary options.
- Proficient in recipe writing and testing.
- Hospitality experience with a customer first approach.
- Effective communication skills, both in person and through online platforms.
- Proficiency in Microsoft Excel or Google Sheets, Google Suite, Slack, App based scheduling systems.
- Knowledge of health, safety, and sanitation regulations.
- Ability to lift at least 40 pounds and stand for long periods.
