Draeger's Supermarkets, Inc in South San Francisco is seeking for an experienced Full-time Culinary Lead Cook (Deli Kitchen manager) immediately.
This position reports to the Plant Superintendent.
Principal Duties and Responsibilities (includes the following but not limited to):
· Manages all day-to-day operations of the kitchen
· Scheduling for all shifts as it relates to the Kitchen team
· Prepares foods by operating a variety of kitchen equipment to measure and mix ingredients, washing, peeling, cutting and shredding fruits and vegetables, and trimming and cutting meat, poultry or fish for culinary use.
· Follows complex recipes and/or product directions for preparing, seasonings, cooking of all Deli items serve in Draeger’s Stores.
· Oversee food preparation for Catering orders and ensures the Kitchen Staff is following company standards, and recipe specifications.
· Follows proper handling and right temperature of all food products.
· Ensure full compliance and effectiveness of the HACCP program and regulatory requirements.
· Understands employee positions well enough to perform duties in employees’ absence or staffing shortages.
· Develops, designs, or creates new applications, ideas, relationships, systems or products, including artistic contributions.
· Review food production practices in all areas of the Kitchen for efficiency, quality, nutritional integrity, waste, cost controls, and safety.
· Develop systems, methods and procedures for consistent operations
· Recruitment and retention of deli staff
· Serves as a Trainer in the training of less experienced cooks.
· Celebrates successes by publicly recognizing the contributions of team members.
· Follows GMP policies in the Kitchen and ensures compliance with food handling and sanitation standards.
· Performs inventory, and/or enter inventory into the production
· Deli equipment sourcing and management
· Reports all accidents and injuries in a timely manner.
· Knowledge of Food and Workplace safety requirements in the Kitchen
· Participates in regular safety meetings, safety training and hazard assessments.
· Willing and able to manage equipment including repairs, cleanliness and maintenance
· Perform other duties as assigned.
Required Knowledge, Skills, and Abilities:
· Must have at least 2-3 years Culinary Leadership experience in food service, hospitality, restaurant, or similar industry.
· Must be bilingual in English & Spanish.
· Completion of Culinary School.
· Expert knowledge of HACCP (Hazard Analysis and Critical Control Point) and Food Safety practices and the ability to identify and correct problems in the operations.
· Excellent production planning and execution skills for all levels of events and operations.
· Ability to create a collaborative environment with a cross section of leaders from different departments.
· Able to use production software to enter pre and post production data
· Reliable, punctual, and committed to work.
· Able to follow instructions and established procedures.
· Possess excellent interpersonal skill and ability to communicate effectively with customers, other team members and leadership.
· Familiarity with SG System is a plus.
· Neat and clean in appearance.
· Maintain a clean, sanitary and organized work area
· Able to communicate, read and comprehend instructions in English & Spanish
Physical requirements include but are not limited to:
· Must be able to stand for 100% of the shift.
· Must be able to work in a loud environment.
· Ability to work around hot equipment and cold refrigeration.
· This position may require lifting and carrying items up to 50 lbs.
