POSITION SUMMARY:
The Kitchen Supervisor is responsible for the activities associated with the operation of the kitchen. Including overseeing the quality of meals, and cleanliness of the site, ordering food and supplies, reviewing menus, and supervising the kitchen staff, drivers, and volunteers. The Kitchen Supervisor assists with conducting client assessments, updating funding source required paperwork, and coordinates with the Director to ensure the client's nutrition requirements are met. The Kitchen Supervisor will coordinate with the Administrative Assistant to keep accurate records of meals provided according to the funding source.
DUTIES AND RESPONSIBILITIES
- Reports Directly to the Senior Services Director.
- Assists in preparing and cooking meals according to the USDA good guide plan.
- Inspects food upon delivery for damages. Must rotate food using the FIFO method.
- Helps with cleaning and sanitizing the kitchen area.
- Supervises the Kitchen and Dining areas.
- Develops cycle menus to be used semi-annually (every six months).
- Operates the Nutrition Program with budget constraints.
- Consults with a dietitian or nutritionist on all menus.
- Supervises all kitchen staff, drivers, and volunteers
- Manages and procures food for all HEP kitchens.
- Monitors quality of home delivery and congregate meals for compliance with regulatory requirements.
- Coordinates training for kitchen staff, drivers, and volunteers.
- Prepares and Posts menus in the community newsletter, radio, sites, and online.
- Monitors the sanitation of HEP kitchens and proper storage of food items.
- Monitors the safety of the kitchen and ensures that all food safety guidelines are followed.
- Fills in for cooks, kitchen staff, drivers, and volunteers when needed.
- Works with HEP volunteers, including volunteer drivers for the home delivery program.
- Attends nutrition training as required, including product knowledge classes and any additional training provided by Title VI, Title III, SSBG, and other grant funding agencies.
- Acquires general knowledge of all HEP services to assist other staff with HEP programs if needed.
- Formulating recipes
- Examine the demand for food and plan food supply accordingly.
- Hiring kitchen staff and drivers.
- Develops relationships with sales reps.
- Attend meetings and training provided held ITCA.
SKILLS AND SPECIFICATIONS
- The position requires you to be physically able to lift 50 lbs., stand for long periods of time, and be physically able to meet the demands of delivery to and from homes.
- The ability to organize, supervise staff, and keep order in your work area.
- Proven skills in using a computer and standard software applications such as Word, Excel, and Outlook.
- General food knowledge, nutrition, and health promotion.
- Working knowledge of the operation of a commercial kitchen, including sanitation, storage, and food handling.
- Watching gauges, dials, or other indicators to ensure a machine works correctly. Instructing and teaching kitchen staff, drivers, and volunteers.
- The ability to supervise staff and adapt to changing work duties and priorities.
EDUCATION, EXPERIENCE, AND SKILLS REQUIRED:
- High School Diploma or General Education Diploma (GED).
- Arizona State Fingerprint Clearance Card.
- Must Be ServeSafe Manager certified.
- Submit to and pass a pre-employment drug/alcohol screening and random test after that.
- Must have a valid Driver's License and be eligible for tribe's insurance.
- Strong knowledge of dietary and nutritional principles, Health department rules and regulations, and sound sanitation practices. Must obtain food handlers Certification.
- A minimum of 6 months experience as a prep or line cook. Any combination of education, training, and experience demonstrates the potential ability to perform the position's duties.
- Ability to lift/ push 50 pounds.
