Texas Rodeo Saloon in Katy, TX., is looking for a Kitchen Manager / Chef for our new location in Katy, TX.
The Kitchen Manager / Chef will be responsible for a from scratch kitchen (see the menus at TexasRodeoSaloon.com) and will be leading all kitchen operations including food production, kitchen sanitation and culinary staff performance. The Kitchen Manager / Chef will be responsible for menu development, recipe development and food preparation.
Responsibilities Include:
- Lead daily scratch kitchen operations including food preparation; restaurant and kitchen sanitation; and daily inventory
- Oversee the daily activities and manage the performance of the culinary staff
- Responsible for the execution of the strategic plan including forecasting; budget management; profit and loss accountability; cost control and inventories
- Ensure that all food production areas provide food items prepared and presented according to set standards at all times; monitoring for taste; visual appeal; and established portions
- Manage all phases of food purchasing, receiving and cost control
- Partner with owner to develop special menus, items and presentations. Create cost cards, recipe cards and photos and catalogs for utilization during taste presentations
- Ensure that the culinary staff performs according to HACCP, OSHA and sanitation guidelines
- Maintain and demonstrate strong knowledge of food trends withing the hospitality industry
- Perform other duties as assigned
Requirements:
- At least 10 years of experience as an executive chef
- From-scratch kitchen experience
- Solid track record of success in previous roles, including demonstrated career growth
- Strong interpersonal and communication skills
- Dependable and motivated with a strong work ethic
