Job Description: General Manager - Gage & Tollner / Sunken Harbor Club
Gage & Tollner is one of the world’s most unique and extraordinary restaurants. Originally opened in 1879, this landmarked oyster and chop house has been a vital part of the fabric of Brooklyn life for generations, and has earned superlative praise since its reopening in 2021. It is also home to the Sunken Harbor Club, an immersive cocktail bar considered among the world’s best.
At Gage & Tollner / Sunken Harbor Club, the General Manager supervises the daily operations of our restaurant and bar, as well as offsite events. The General Manager reports to ownership (Ben Schneider, Sohui Kim, and St. John Frizell), and works in tandem with the executive chef, who supervises all culinary operations.
Together, the General Manager, chef, and ownership will set goals for the company relating to financial performance, workplace culture, staff performance, product quality, our role in the community, and more; the General Manager’s primary responsibility is to organize the company’s efforts to reach those goals within deadline.
Below is a list of areas of responsibility. The General Manager is not expected to complete all tasks related to these responsibilities themself, but rather ensure that these tasks are completed accurately and on time.
- With the chef and ownership, set the company’s financial objectives regarding revenue, costs, and profitability, and direct the company to achieve those goals
- Ensure all financial and personnel/payroll–related administrative duties are completed regularly
- Create an intentionally positive, appreciative, supportive, and fun workplace culture that attracts and retains great people
- Direct the FOH management team toward achieving company goals by assigning projects, creating deadlines, and supervising work
- Lead managers and hourly staff by ensuring that everyone
- Knows what to do when at work
- Knows why they’re doing that work, and why doing it well matters
- Has the proper tools and time to do their work
- Interview, hire, train, and, when necessary, terminate employees
- Develop employees by providing regular ongoing feedback, establishing performance expectations, and conducting performance reviews
- Prepare schedules and ensure that the restaurant is staffed for all shifts
- Develop, document, and teach standard operating procedures for restaurant operations, including set-up and breakdown side work, table maintenance, cocktail and ingredient production, wine/spirit ordering and inventory, and more
- Enforce sanitary practices for food handling, general cleanliness, and maintenance of dining areas and bathrooms
- Ensure that floor staff has a thorough knowledge of all menu items, including cocktails, wine by the glass, beer, and food through regular education and quizzing
- With head bartenders and beverage director, oversee the beverage programs at Gage & Tollner / Sunken Harbor Club, including cocktails, wine, beer, and nonalcoholic drinks, to ensure the highest possible standards of quality
- Ensure excellent guest service in all areas, and consistently train staff to provide such service
- Respond to complaints, taking any and all appropriate actions to turn dissatisfied guests into return guests
- Ensure that proper security procedures are in place to protect employees, guests, and company assets
- Ensure a safe working and guest environment to reduce the risk of injury and accidents
- Manage shifts, which includes daily decision making, scheduling, product quality, and cleanliness
- Supervise G&T / SHC’s online presence, including social media, our website, and various other websites (Google, Yelp, etc.)
- Supervise design, production, and mail-order fulfillment of all Gage & Tollner / Sunken Harbor Club merchandise
- Create and administer various online and in-store promotions to achieve our company goals
- Work with graphic designer to produce any necessary collateral (menus, in-store signage, etc.)
Job Type: Full-time
Pay: $95,000.00 - $120,000.00 per year
