JOB SUMMARY: Responsible for overseeing and ensuring food preparation, production and quality for food service venues and operations. Participates in the selection and development of recipes, menus and specialty items. Ensures that standardized production recipes are consistent and meet quality standards.
MAJOR RESPONSIBILITIES:
- Responsible for food quality, presentation, production and waste prevention by conducting quality inspections and touring each venue on a daily basis. Delivers on established Labor and Food Cost Targets and works with the buyers and warehouse staff to ensure the quality and availability of product.
- Responsible for staffing, training and development of the culinary team. Works closely with the Senior Director, Assistant Directors and General Managers to assess the culinary team's skill set and the appropriate placement. Gives clear direction, sets expectations, and provides hands on culinary development.
- Responsible for overseeing daily Food Safety and Sanitation practices. Works closely with the venue management and culinary teams to ensure HACCP and other food safety programs and standards are upheld.
- Works in partnership with the Executive Chef of Research and Development Chef to develop new menu items, recipes and to research concepts. Develops holiday and special event menu items. Assists with park exclusives and plated meals in full service restaurants and coordinates catering functions with the Banquet Chef.
- Serves as role model by maintaining a high degree of professionalism and upholding the UO leadership competencies.
- Understands and actively participates in Environmental, Health & Safety responsibilities by following established UO policy, procedures, training and team member involvement activities.
- Performs other duties as assigned.
SCOPE: Responsible for food quality throughout Food Services and oversees food cost, labor budgets and food safety. Participates in revising and developing menus and/or specialty menu items. Responsible for training and development and succession planning.
EDUCATION:
- High school degree or GED is required.
- Technical school is preferred.
- Associate's degree (AA) is preferred or equivalent culinary training.
- Bachelor's degree is preferred.
- Other: Completion of a culinary apprenticeship, degree or certification preferred.
EXPERIENCE:
- A minimum of 10 years of culinary experience in a high volume environment, overseeing multiple high volume venues and supervisory experience; or equivalent combination of education and experience.
- Professional Food Manager Certification required and participation in a Chef Apprenticeship Program preferred.
ADDITIONAL INFORMATION:
- Ability to work with a diverse workforce with varying back grounds and skill sets.
- Knowledge of varying cuisines, fine dining, quick serve and family style dining experience desired.
- Must be able to work a flexible and varying schedule based on special events and business demands.
- Must be able to ideate, create and execute menu offerings at a high level.
