Job description

Summary: Position is responsible for the overall administration, management and development of the Food & Beverage Department and its staff.

Qualifications:

  • Minimum bachelor’s degree from a four-year college*
  • Minimum 10 years' experience in Food & Beverage operations or related field. 5 years of management experience is required*
  • Excellent (English) written and verbal communications, organizational and analytical skills
  • Demonstrated skills and experience providing exemplary Guest Service
  • Extensive experience and skills in mathematics, budgeting and financial report analysis
  • Leadership skills necessary to mentor, guide and develop subordinate managers, supervisors and line employees.
  • Ability to interpret extensive technical data to define problems, establish facts and draw valid conclusions.
  • Effective knowledge of a broad range of computerized systems used in Accounting, Gaming and Hospitality
  • Demonstrated success at managing a fine dining restaurant.
  • Thorough knowledge and appreciation of Food preparation, presentation and service, including wines and spirits.
  • Must possess a valid Class 3 Gaming license.
  • Must possess a Washington State Class 12 MAST permit.
  • Must be able and willing to work beyond standard work week, including long hours, evenings and weekends, as well as travel for business purposes whenever necessary.
  • Equivalent management experience or equivalent education may be considered in lieu of one another

License Requirements

  • NIGC Suitability, WGSC C-III License, LTGA License

Essential Job Functions:

  • Ensures the maximum level of guest service and satisfaction is achieved and maintained.
  • With the approval of the General Manager, creates and executes effective operational strategies for areas assigned to position and ensures accuracy of all paperwork in accordance with all policies.
  • Interviews, hires, trains, rewards, promotes, coaches, disciplines, and terminates employees according to company policies and applicable regulations and laws.
  • Ensures compliance by all staff members to all procedures, policies, regulations, and applicable laws.
  • Always display a professional appearance and positive attitude.
  • Maintain confidentiality and chain of command.
  • Evaluate new products and maintain effective relationships with vendors and external contacts.
  • Serve as a member of the Executive Leadership Team, attending meetings with the GM, peers and subordinates.
  • Thorough knowledge of Silver Reef Casino Policy Manual, system of Internal Controls and all applicable Federal, State and Tribal laws and regulations
  • Develop and execute effective plans for growing revenue and improving profitability.
  • Provide expert knowledge in recommendations related to Food and Beverage products and services.
  • Perform other duties as assigned.

Physical/Mental Requirements: (*Constantly, Frequently, Occasionally)

  • Constantly watching, speaking, hearing, sitting and standing,
  • Frequently reading, writing, typing, stooping, using hands/fingers, handle objects, tools or controls
  • Occasionally lifting, carrying, pushing and pulling

Working Conditions:

Mainly indoors, exposure to smoke, noise, odors and possibly unruly patrons/employees
