Pay
Minimum – Anticipated Maximum Base Salary: $104100 - $140500 / year
In addition to base salary, we offer an annual bonus plan based on company and individual performance, or a role-based, uncapped sales incentive plan. The advertised pay range represents what we believe at the time of this job posting, that we would be willing to pay for this position. Only in special circumstances, where a candidate has education, training, or experience that far exceeds the requirements for the position, would we consider paying higher than the stated range. Responsibilities
- Possess culinary expertise with refined cooking technique, style and taste to pioneer menu development and excellence.
- Partner and help manage Unit Chefs to manage financial responsibilities such as expense planning and maintenance of their units.
- Support the entire scope of Culinary operations, at times involving hands-on management and cooking when necessary
- Manage a staff of Executive Chefs, and Executive Sous Chefs and Sous Chefs to ensure consistent delivery of our product and service within the standards of the budget, policies, and procedures.
- Support and develop hiring and training procedures for culinary operations; conduct and support annual performance appraisals.
- Guide and approve culinary team standard operating procedure manuals
- Craft culinary experiences reflecting the company brand and establish procedures for recipe development and menu changes
- Work with the VP of Food and Beverage and Purchasing to design and develop purchasing programs and procedures that help to increase efficiencies.
- Establish procedures for all Executive Chefs to develop recipes, portion specifications, and establish standard preparation procedures for all dishes.
- Make periodic and regular inspections and inventories of units to confirm the quality of food preparation and service, food appearance, cleanliness, and more
- Address all food quality issues and or concerns.
- Prepare operational reports and analyses setting forth progress, adverse trends and making proper recommendations for success.
- Ensure Executive Chefs maintain excellent kitchen hygiene conditions, following all Health Department sanitation laws a
- articipate in new restaurant ventures such as menu development, kitchen design, concept creation, menu implementation, and general involvement of restaurant openings. Qualifications
- Minimum of 10 years of experience as a multi-unit Executive Chef in a restaurant, hotel, or food and beverage unit with a similar style of dining, capacity, and volume
- Culinary degree preferred
- Knowledge of Delaware North’s Parks and Resorts Group’s featured cuisines and beverages is a plus
- ServSafe certification, ServSafe alcohol certification, and Food Safety Handler certification required
- Knowledge of and experience using Microsoft Office Suite, BirchStreet, and point of sale systems
- The ability to travel up to 50%
