Position Overview
The Illinois Department of Corrections, Office of Health Services is seeking a dynamic and motivated experienced certified Dietitian to serve as the dietary and nutrition expert for the agency. This position develops, monitors, and evaluates the effect of nutrition and dietary plans for all populations of the agency ensuring healthful diets and nutrition. The individual will provide guidance on medical/special dietary needs and integration of such needs into an overall healthful diet. This person must maintain satisfactory relationships with other employees, managers, and executive level staff, as well as with medical providers and other outside hospitals and clinics. Job Responsibilities
  1. Functions as the dietary and nutrition expert for the Office of Health Services (OHS).
  2. Identifies nutritional and dietary needs of groups, individuals and the overall population served.
  3. Recommends policies and procedures based on nutritional heath needs of the IDOC population.
  4. Liaises with IDOC providers and those from outside hospitals and clinics to ensure that open and complete communication about the nutritional and dietary needs prescribed and/or promoted at special clinics, acute care settings and at hospital discharge are transmitted effectively to ensure such dietary needs are met.
  5. Promotes health by developing programs for healthy diets and eating.
  6. Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.

Minimum Qualifications
  1. Requires knowledge, skill and mental development equivalent to completion of four (4) years of college in dietetics.
  2. Requires possession of a current Food Service Sanitation Certificate issued by the Illinois Department of Public Health or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).

This class is included as an Upward Mobility Program credential title.
Preferred Qualifications (In Order of Significance)
  1. Prefers at least two (2) years of experience working in dietetics and food services management, including working with nutritional values, costs and accounting.
  2. Prefers at least two (2) years of experience implementing large-scale food service procedures and practices.
  3. Prefers at least two (2) years of experience implementing health and sanitary requirements applicable to large-scale food services.
  4. Prefers at least two (2) years of experience planning modified diets and menus.
  5. Prefers at least two (2) years of experience working with modern methods, materials and appliances used in large-scale food preparation and service.
  6. Prefers at least one (1) year of experience teaching basic food and nutrition principles.
  7. Prefers at least one (1) year of experience directing quantity food preparation and cooking with economy and efficiency.
  8. Prefers at least one (1) year of experience maintaining food service records and preparing related reports.
  9. Prefers extensive demonstrated knowledge of and ability to apply scientific applications of biologic processes related to food and nutrition.
  10. Prefers knowledge of National Commission on Correctional Healthcare (NCCHC) standards and nutrition delivery with a correctional system.
  11. Prefers an analytical thinker and problem solver with ability to self-start projects and critique results.

Conditions of Employment
  1. Requires ability to travel in the performance of duties, with overnight stays as appropriate.
  2. Requires appropriate, valid driver's license.
  3. Requires ability to pass the IDOC/IDJJ background check.
  4. Requires ability to pass a drug screen. On January 1, 2020, the Cannabis Regulation and Tax Act made it legal for residents over the age of 21 to produce, consume and sell cannabis in Illinois. Please note that although the law has changed, the Department will continue to enforce the Department's zero tolerance Drug Testing policy. The use of unauthorized drugs, including cannabis, by an employee, regardless of the position held is prohibited.
